BANANA-BERRY FROZEN YOGURT BARS image

I just found this recipe on the back of a box of honey grahams--looks so easy and delicious. Can't wait to try them. I love a dessert that is both cold and sweet! Photo: Snackworks.com

10 1/2 honey grahams, broken into quarters (42 rectangles)
1/2 c sliced fresh or frozen strawberries
1/2 c chopped bananas
1/4 c blueberries
1 c vanilla nonfat greek-style yogurt
1 c thawed frozen reduced-fat whipped topping

Steps:

  • 1. Line a 9-inch square pan with foil, with ends of foil extending over sides. Arrange half the graham pieces, in 3 rows of 7 pieces each, on bottom of pan.
  • 2. Pulse fruits in blender or food processor just until blended--some chunks should remain.
  • 3. Spoon fruit into medium bowl; stir in yogurt and whipped topping. Spread over graham pieces in pan; top with remaining graham pieces, aligning over graham pieces on bottom layer, so they form squares.
  • 4. Freeze for 4 hours. Use foil "handles" to lift dessert from pan; cut between grahams into 21 bars. Let stand 5 minutes before serving.
