Number Of Ingredients 7

1 pound(s) fresh green beans, ends trimmed
1 large red bell pepper, cut into long strips
1 large sweet onion, such as vidalia, cut into thin strips
1/4 - 1/3 cup(s) lighter flavored olive oil
3-4 tablespoon(s) good balsamic vinegar
1 or more teaspoon(s) garlic salt with parsley
1/2-1 teaspoon(s) fresh ground black pepper

Steps:

  • Preheat oven to 425 degrees. Wash and trim green beans, leaving them whole. Wash and slice red pepper and sweet onion. Lay vegetables in large casserole dish.
  • Pour olive oil over vegetables and gently toss. Drizzle balsamic over them and season with garlic salt and pepper. Toss until well covered with seasonings.
  • Bake at 425 for 35-40 minutes, stirring frequently for even roasting. If desired, drizzle extra balsamic vinegar over them at end of cooking time. May be served hot or at room temperature.
