BAKED/POACHED SALMON image

Number Of Ingredients 6

3-1/2 to 4lbs center cut salmon
2 Tablespoons chopped shallots
2 stalks fresh dill
1/4 cup dry white wine
1/2 teaspoon leaf tarragon, crumbled, or 6 sprigs fresh tarragon
1 teaspoon salt

Steps:

  • 1. Rinse fish in cold water, pat dry with paper towel 2. Tear off piece of heavy duty foil large enough to enclose fish. 3. Place fish in center of foil: fold up sides. 4. Put 1 T of shallots and 1 stalk of dill on fish 5. Combine wine, tarragon, salt, remaining shallots and dill in a saucepan. Simmer until reduced by 1/2. Pour over fish. Close foil tightly. 6. Bake in 375 degree oven 15 to 20 mins per pound. (a 6lb salmon takes 75 mins) 7. Serve with cucumber dill sauce.
