Steps:
- Melt butter. Add mushrooms and cook until most of liquid has evaporated (about 5 minutes). Stir in salt, garlic salt, pepper, Italian seasoning. Set aside. Finely shred zucchini in a bowl, combine zucchini, bread crumbs, 2 T of cheese, and mushroom mixture. Spoon into a greased 8 inch square. If made ahead, cover and let stand at room temperature for as long as 3 hours. Beat eggs until blended and stir gently with a fork. Bake uncovered at 350 for 30 minutes.
