Baked Potato Salad image

This is a quick go to recipe for me! Attending a no theme potluck I will make this, with the meat most of the time, and offer it up. Serve cold or warm, tastes about the same either way. Raving reviews each time! If you need a larger amount, say for a potluck, use 5 - 10 lbs of potatoes and increase other ingredients accordingly....

2 1/2 lb preferred potatoes
butter, softened
1 c shredded colby jack cheese
1 c ranch dressing
1 c bbq or steak sauce
1/4 c bacon pieces
1/4 c chives
1/2 c sour cream

Steps:

  • 1. Wash and slices potatoes with skin on. Set to boil as you would mashed potatoes.
  • 2. Once softened, drain and mash. To have the consistency of a baked potato, do not over mash.
  • 3. Add butter, ranch, bbq sauce and stir with wooden spoon until well blended. You should see a slightly copper color. Think of a baked potato next to your steak and the sauce got into you potato.
  • 4. If desired add the optional ingredient sour cream with step 3.
  • 5. Transfer to your serving dish. Garnish with bacon and chives.
  • 6. Need a simple meal? Brown some ground meat and throw it in while mixing other ingredients in Step 3! Need to reduce sodium? Choose low sodium add-ins and remove bacon.
