Stir in sherry/scotch and broth and bring to boil Season with salt and pepper. Preheat Broiler Ladle the soup into 4 ovenproof dishes, place the toasted bread on top of the soup and sprinkle cheese on top. Place the bowls under the broiler and broil until the cheese is melted and bubbling. Serve immediately You can freeze the soup and do the bread and cheese part when defrosted and ready to serve.
