BAKED CHICKEN MILANESE WITH ARUGULA image

1 1/4 cups plain breadcrumbs
olive oil
1/4 cup all purpose flour
2 large eggs. lightly beaten with a little dijon mixed in
4 skinless chicken breasts
2 tbsp lemon juice plus wedges
5 ounces baby arugula
1 small red onion, thinly sliced

Steps:

  • Heat oven to 425. Toss breadcrumbs and 1/4 cup oil til well combined. Season with cajun or greek seasoning. Spread on sheet and bake for 8 minutes turning once til golden brown. Flatten breasts to 1/2 inch thick. Coat in flour (shaking excess), then egg, then crumbs pressing to adhere. Place on a rack and bake for 10 minutes til opaque. Whisk 2 tbsp oil and 2 tbsp lemon juice and season with salt and pepper in a large bowl. Add arugula and toss. Add some shaved parm. Top chicken with salad.
