Steps:
- Preheat the oven to 375°F.
- Season the salmon with salt and pepper. Top each fillet with a sprig of tarragon, lemon zest, and garlic.
- Wrap each fillet with 2 slices of bacon.
- Heat some coconut oil in a large skillet over medium-high heat and cook the salmon on each side until golden brown, about 2 minutes per side.
- Transfer to the oven and bake for about 6-8 minutes, or until desired doneness is reached.
