Bacon Wrapped Salmon image

4 pieces Salmon fillets, 4-6 ouces each
2 sprigs Tarragon, cut in half
2 cloves Garlic
1 Lemon zest
8 slices Bacon, uncured
1 pinch Salt and pepper
2 tablespoons Coconut oil

Steps:

  • Preheat the oven to 375°F.
  • Season the salmon with salt and pepper. Top each fillet with a sprig of tarragon, lemon zest, and garlic.
  • Wrap each fillet with 2 slices of bacon.
  • Heat some coconut oil in a large skillet over medium-high heat and cook the salmon on each side until golden brown, about 2 minutes per side.
  • Transfer to the oven and bake for about 6-8 minutes, or until desired doneness is reached.
