- 1. Pit dates carefully. Set aside. Halve the bacon slices crosswise. Put cream cheese into a pastry bag fitted with a round plain 1/4 inch tip. (or just place in a plastic bag and cut a small hole in the corner). Stuff each date cavity with 1 piece of nut. Pipe cheese into each stuffed date. Wrap 1 piece of bacon around the width of each date. Roll in brown sugar. Place dates on a foil lined pan and spray with non-stick oil, seam side down at lest 1/2-inch apart. Bake in upper third of preheated oven at 500^ until bacon is golden and crisp, about 7-9 minutes. Remove and set aside to cool briefly before serving. These are excellent cold too.
