Avocado Relish image

Number Of Ingredients 12

1/2 avocado, finely diced
2 Tbsp lime juice
1/4 c red onion, diced
1/4 c red bell pepper, diced
1/4 c green bell pepper, diced
2 large plum tomatoes, diced
1 Tbsp cilantro, fresh and chopped
1 Tbsp chili pepper, seeded and chopped
2 small garlic cloves, chopped
2 tsp olive oil
"just a pinch" of salt
"just a pinch" of pepper

Steps:

  • 1. In small bowl, combine avocado and lime juice; set aside.
  • 2. In separate bowl combine remaining ingredients, mix well; carefully fold into avocado mixture.
  • 3. Cover with plastic wrap and refrigerate until flavors blend, at least 30 minutes.
  • 4. Just before serving, stir well.
