1 Avocado
1 small tomato
Red bell pepper
Onion
Crisp lettuce leaves
Baguette
For the dressing:
Vinegar (I use white wine or balsamic)
Olive oil
Tea spoon dijon mustard
Salt and pepper

Steps:

  • Mash the avocado in a bowl, and add the chopped tomato, red pepper and onion. Mix the dressing ingredients together and pour over the avocado mix. Spread the mix thickly onto the baguette and add the lettuce.
