1 cup allpurpose flour - 1 cup whole wheat flour - 1 1/2 tsp baking soda - 1 tsp salt - 2 tsp cinnamon - 1 cup sugar - 1 cup vegetable oil - 4 eggs - 2 cups grated carrots(raw) - 1 1/2 grated peeled apple - 1 cup raisons - 1/2 cup chopped walnuts-CREAM CHEESE ICING - 4 oz soft cream cheese - 1/4 cup soft butter - 1/2 tsp vanilla - 1 cup icing sugar

Steps:

  • grease & flour 9"x13" baking pan-in medium bowl mix flours,baking soda, salt & cinnamon - in large bowl beat sugar,oil,and eggs with wooden spoon until slightly thickened - stir dry mixture into sugar mixture - add carrots, apple,raisons,nuts and blend. turn into pan - bake in 350 degree preheated oven for 35 to 40 minutes - cool on wire rack. CREAM CHEESE ICING - beat cream cheese and butter with wooden spoon in small bowl until fluffy - beat in vanilla and enough icing sugar until spreading consistency.frost and cool cake. Enjoy.
