Aunt Else's Turkey Tetrazzine image

Aunt Else always made this if Gene was coming for a visit. This is one of Gene's favorite recipes.

Number Of Ingredients 11

1 1/2 pound(s) sliced turkey
1/4 cup(s) butter
1/4 cup(s) flour
- salt to taste
1 quart(s) warm homemade chicken broth
1 cup(s) heavy cream
1/4 cup(s) vermouth
2 - egg yolks beaten
2/3 cup(s) fresh grated imported parmesan cheese
1/4 pound(s) sliced swiss cheese
1 pound(s) linguine

Steps:

  • Melt butter in saucepan, add flour and stir, when roux forms(do not brown) gradually add chicken broth and warm cream, stirring until thickened, reduce heat to low, add wine, ginger and salt. To beaten egg yolks add several tbs. of hot white sauce, then add egg mixture to white sauce, continue to stir until desired thickness.
  • Cook pasta drain and arrange in greased 2 qt. baking dish. Arrange turkey over linguine, swiss cheese, white sauce and sprinkle Parmesan cheese over top. Bake in poreheated oven about 30 minutes at 350 degrees or until bubbly. Mushrooms can be added if desired.
