ASPARAGUS WITH GARLIC AIOLI image

1 head garlic (top 1/4 removed)
2 tbsp plus 2 cups olive oil, divided
2 tbsp Dijon mustard
2 tsp fresh lemon juice
Salt and pepper
3 lb. asparagus, trimmed and steamed until cooked but still firm

Steps:

  • 1)Heat oven to 325 2)Place garlic on sheet of foil. Drizzle with 2 tbsp olive oil; loosely wrap. Bake until soft and tender, about 1 hour. 3)Gently squeeze garlic blubs; place in food processor. 4)With machine running, drizzle in remaining olive oil. Stir in mustard and lemon juice, salt and pepper. 5)Serve with asparagus.
