ASPARAGUS, SHRIMP + PENNE WITH SAFFRON image

Number Of Ingredients 11

2/3 cups white wine
1/4 tsp saffron threads
2 lbs med asparagus cut in 1 inch pieces
2 Tblsp olive oil
1 lb shrimp (shelled)
1 lb penne
1/4 cup minced shallots
1 1/2 heavy cream
3/4 cup chicken broth
salt + pepper
1/4 cup minced chives

Steps:

  • In sm bowl, combine wine + saffron + let steep for 20 min. In lg skillet cook asparagus in 1 inch of salted water till tender. Drain. Heat oil in skillet, add shrimp + cook til done but not overcooked. Transfer shrimp to plate. Meanwhile cook penne, drain + put in lg bowl. Add shallots + saffron wine to skillet + bring to boil until almost all liquid evaporates. Stir in cream + chicken stock + simmer over med heat until reduced by half (7 min). Stir in asparagus + shrimp + simmer 2 min. Season with salt + pepper.Add to pasta + toss to combine. Garnish pasta with chives, serve hot.
