ASPARAGUS IN TARRAGON VINAIGRETTE WITH PEACANS AND BACON image

1 tablespoon olive oil cooking spray
1 tablespoon minced fresh garlic
11/2 pounds asparagus (sliced 11/2-inch)
2 tablespoons balsamic vinegar
2 teaspoons sugar
1 1/2 teaspoons minced fresh tarragon
3/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
2 tablespoons chopped pecans, toasted
2 bacon slices, cooked and crumbled

Steps:

  • 1. Heat oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add garlic; saute 1 minute. Add asparagus; saute 4 minutes or until tender. 2. Combine vinegar and sugar in a small bowl. Add vinegar mixture, tarragon, salt, and black pepper to asparagus; stir well. Cook 2 minutes, stirring frequently.
