Arizona Chicken image

Number Of Ingredients 6

2 boneless, skinless chicken breasts
1 Tbsp dijon mustard
2 Tbsp butter
1/2 c salsa
2 limes juiced
1/4 c chopped cilantro

Steps:

  • 1. Pound each breast between sheets of plastic wrap to a uniform thickness of 1/2 inch.
  • 2. Spread with mustard.
  • 3. In a large skillet, melt butter over medium heat.
  • 4. Add chicken and cook 3-4 minutes on each side.
  • 5. Stir salsa and lime juice together and add to skillet.
  • 6. Simmer gently, uncovered, until chicken is cooked through and sauce has thickened, about 6-8 minutes.
  • 7. Sprinkle with cilantro.
