APRICOT CHCKEN W. TOASTED ALMONDS image

Number Of Ingredients 7

2 lbs chicken breast, sliced into thin strips
2 cups peach or apricot reserves
½ cup plus 2 tbsps low sodium soy sauce
2 tablespoons Dijon mustard
½ cup light brown sugar
½ cup dried apricots
½ cup sliced, blanched almonds, lightly toasted

Steps:

  • Prepare the chicken and marinate with the ¼ cup soy sauce for 20 minutes. In a sauce pan, blend the preserves, remaining soy sauce, mustard, sugar and dried apricots. Cook over medium heat until everything is well blended, (About 10 minutes) Heat a skillet with 3 tbsp of vegetable oil and when hot add the chicken strips and cook 8 -10 minutes until golden and cooked through. Place in serving dish that is oven proof. Pour the apricot sauce over the chicken and heat for 15 minutes uncovered in a 350 oven. Sprinkle with the toasted almonds before serving. Serves four.
