Apricot-Banana Bread image

A perfect bread for the fall season. Baking this bread just fills the home completely with scents of heaven and it is so delicious. Warning... Very addicting!

1/3 cup(s) butter
2/3 cup(s) sugar
2 - eggs
1/4 cup(s) buttermilk
3 medium bananas,extra ripe are the best
1 1/4 cup(s) flour
1 cup(s) bran cereal, not flakes
1/2 teaspoon(s) baking soda
1 teaspoon(s) baking powder
3/4 cup(s) dried apricots, chopped
1/2 teaspoon(s) salt
1/2 cup(s) walnuts, chopped
1 teaspoon(s) pumpkin pie spices

Steps:

  • In a mixing bowl, cream butter and sugar. Add eggs and mix well.
  • In another bowl, combine flour, baking powder, soda, salt, and pumpkin pie spice.
  • In a small bowl, Combine mashed bananas and buttermilk.
  • Combine flour mixture and banana mixture alternately to the creamed mixture. Stir in bran, apricots, and nuts.
  • Pour into a greased 9X5X3 inch loaf pan. Bake at 350 degrees for 55-60 minutes or until bread test done. Cool 10 minutes before removing from pan.
