Apple Walnut Cake image

This cake actually tastes as good if not better on the second day. If time is a factor, you can freeze this cake frosted for up to 1 week before serving. This recipe shows this in a 13"x9"2" baking pan, but you can bake this using a bundt pan.

3 eggs
2 c sugar
1/2 c vegetable oil
2 tsp vanilla extract
2 c all-purpose flour
2 tsp baking soda
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp salt
4 c diced unpeeled apples
1 c coarsely chopped walnuts
cream cheese frosting - see my special recipe for this

Steps:

  • 1. In a mixing bowl, beat eggs, sugar, oil and vanilla. Combine flour, baking soda, cinnamon, nutmeg and salt; mix into the batter.
  • 2. Fold in apples and nuts. Spread into a greased 13"x9"x2" baking pan.
  • 3. Bake at 325 degrees for 50-60 minutes or until a toothpick inserted near the center comes out clean. Cool in pan on a wire rack. Frost with Cream Cheese Frosting (see my recipes for this). Store in the refrigerator.
