- 1. In a medium bowl, mix the dry ingredients for the crust. Add the oil and use a pastry blender to work in. Add the ice water and stir with a fork just until the dough starts to come together.
- 2. Press the dough pieces in to a 9 inch pie pan using your fingers. Cover the pie crust with non-stick foil (non-stick side touching dough). Fill the foil covered crust with dry beans or pie weights.
- 3. Bake the crust in a 425 degree oven for 10 minutes. Reduce the heat to 375 degrees and bake 10 minutes longer. Remove from oven and cool a bit before carefully removing the foil and beans.
- 4. While the crust is baking, prepare the apples. In a large fry pan heat the 1 Tbsp oil (med/hi heat) and saute the apple slices for about 7 minutes. Stir often. Add the apple juice and cook 1 -2 more minutes and remove from heat. Fold in the sugar and other dry ingredients, which have been pre-mixed. Set aside.
- 5. For the streusel topping, mix the ingredients and set aside.
- 6. Assemble the pie by filling the cooled pie crust with the apple filling and using a fork to distribute the apples evenly. Sprinkle the streusel topping evenly over the apples. Cover the crust with a pie shield to protect from burning.
- 7. Bake pie in a 375 degree oven for 35 minutes. Reduce the heat to 325 degrees and bake an additional 20 minutes.
- 8. Remove pie from oven and cool on a rack for 20-30 minutes. Prepare the glaze by adding enough cold water to the powdered sugar to achieve just the right consistency to drizzle over the baked pie.
- 9. Cool pie completely (about 3 hours) before serving. This pie is perfect without whipped cream or ice cream.
