APPLE SHORTCAKE image

This recipe is from my junior high cooking class. Very good and simple. It is funny to see my beginning cooking era recipes compared to my Great, Great Auntie's--hers only has list of ingredients with amounts! ;)

Number Of Ingredients 11

2 c sifted flour
2 tsp baking powder
1/2 tsp salt
1/8 tsp cinnamon
1/8 tsp freshly grated nutmeg
1 c brown sugar, firmly packed
1/2 c butter, softened
1 egg
3/4 c milk
1 large tart apple, pared, cored and thinly sliced
1 Tbsp sugar

Steps:

  • 1. Heat oven 350. grease 9" pie plate. Bake 45 minutes until center is firm.
  • 2. Sift together dry ingredients into a large bowl, stir in brown sugar, cut in 6 Tbsp, butter until crumbly. (save 1/2 cup for topping)
  • 3. Break egg in glass measuring cup; stir with fork; add milk to make 1 cup (it will take about 3/4 c.)Stir into flour mixture until well blended; pour into greased 9" pie plate
  • 4. Arrange apple slices overlapping in two circles on top of crumbs.
  • 5. Sprinkle with saved 1/2 c. crumb mixture and dot with saved 1 Tbsp butter. Sprinkle lightly with sugar. Bake 45 minutes.
  • 6. Serve warm. Plain, with ice cream or whipped cream.
