I received this recipe from my daughter who received it from a friend at work. It is so good to top off any meal, but it is an excellent dessert to use with your Mexican menu. It is super easy and takes just a few minutes to put together.

Steps:
- 1. Preheat oven to 350°. Spoon fruit evenly down the middle of your flour tortillas, sprinkle with cinnamon. Roll up tortillas and place seam side down into a sprayed 9x12 baking dish. Bring margarine, water & sugars & pinch of salt (this cuts the too sweet taste) to a boil in a medium saucepan. Reduce heat & simmer, stirring constantly for 3 minutes. Pour sauce evenly over tortillas and sprinkle with extra cinnamon. Bake for 30 - 45 minutes. They can be cut in 1/2 to make 24 servings. Top with vanilla ice cream. Spoon some of the caramel sauce over the ice cream. ***NOTE: I recently made this using Bonnie's Blue Ribbon Butter and Splenda in the place of the white sugar and it was delicious.
