Apple Crumb Muffins image

Fall is here and time to start baking again ( just to darn hot during the summer)What a great treat to start fall with, some nice warm apple muffins with a hot cup of coffee. Easy to make and super yummy to eat

Number Of Ingredients 15

1 c buttermilk
1 c oatmeal, uncooked
1 c all purpose flour
1 c pecans, in pieces
1 c grated peeled apple
1/2 c brown sugar, firmly packed
3 Tbsp shortening
3 Tbsp butter, room temperature
1 tsp ground cinnamon
1/2 tsp baking powder
1/2 tsp salt
CRUMB TOPPING
1/2 c all purpose flour
1/4 c brown sugar, firmly packed
3 Tbsp butter, cold

Steps:

  • 1. Preheat oven to 400. In a large bowl add buttermilk and oatmeal( uncooked) stir together and set aside for 10 minutes.
  • 2. In a separate bowl cream brown sugar, butter and shortening, add egg and beat well.
  • 3. In a small bowl add flour, salt, baking powder and cinnamon, stir together.
  • 4. After the 10 minutes is up add butter/sugar mixture to the oatmeal in the large bowl, stir until blended. Add the grated apple and blend again.Add pecans in the bowl with the flour, stir around to coat the pecans.
  • 5. Add flour/pecans to the wet ingredients and fold until blended. Divide into a muffin pan that has been sprayed with cooking spray ( makes 12)
  • 6. Crumb Topping--- in a small bowl add flour and brown sugar, mix well with fork or fingers , cut butter in until good and crumbled.
  • 7. Sprinkle each muffin with topping and bake for 25-30 in a 400 degree oven ( mine was 27 minutes in my oven)
