ANGEL HAIR PASTA WITH GARLIC, SCALLOPS AND ROCKET image

20 large scallops with roe
250g (9oz) angel hair pasta
150ml (5fl oz) extra virgin olive oil
2 garlic cloves, finely chopped
3T white wine
1T lemon juice
100g (3 1/2 oz) baby rocket leaves
25g (1oz) chopped coriander leaves

Steps:

  • Trim any veins, membrane or hard white muscle from the scallops. Pat dry with paper towel. Cook pasta until al dente. Drain and toss with 1T oil. Meanwhile, heat 1T oil in frypan, add garlic and cook a few seconds, until fragrant. Do not brown. Add the combined wine and lemon juice, and remove from heat. Heat BBQ plate and brush with oil. Season scallops and cook 1 minute, each side. Gently reheat the garlic mixture, add the rocket and stir over medium heat for 1-2 minutes, or until wilted. Toss through the pasta then add remaining oil and half the coriander, and mix well. Divide among 4 servings, arrange the scallops over the top and garnish with the remaining coriander.
