2 c sugar
1 c shortening, butter flavor
2 eggs beaten
1 c dark molasses
1 tsp vanilla extract
6 c flour
3 tsp baking soda
1 tsp salt
3 tsp cinnamon
2 tsp ground ginger
2 c buttermilk
1 c raisins

Steps:

  • 1. In a large bowl beat together the sugar and shortening to creamy. Add beaten eggs, molasses, and vanilla and beat well.
  • 2. In a separate bowl, combine flour, baking soda, salt, cinnamon, ginger until well blended.
  • 3. Add dry mixture to the sugar mixture in several additions, alternating flour and buttermilk until well combined.
  • 4. Bake at 375F for 13-15 minutes depending on your stove. They are done when the spring back like a cake. Store in air tight container.
  • 5. ***I didn't have buttermilk so I added 2 tbsp of lemon juice to 2 cups of milk.
