Amish Crushed Corn Fritters image

This is a recipe I am posting for Susie's World Tour event for the Amish region of the tour. This is a recipe from my cookbook called "Amish Cooking", compiled by a Committee of Amish Women, Deluxe Edition, that I changed to be more easily followed.

Number Of Ingredients 7

2 c crushed corn (preferably from fresh corn on the cob)
2 lg eggs
2 Tbsp sugar
1 c cracker crumbs (you can substitute flour, but less tasty/texture)
2 tsp baking powder
milk to moisten as needed
salt and pepper to taste

Steps:

  • 1. Combine all the above ingredients and mix them well. Form mixture into walnut size balls and deep fry them in fat.
