Steps:
- Deep fry potatoes and eggplant until just lightly golden. Drain. Put oil in heavy pan. Add cumin and stir for 30 seconds. Combine other spices with ginger and water. Add to pan and stir for about 1 minute. Add tomatoes and simmer until tomatoes are just soft. Add eggplant and potato and reheat. Toss with cilantro.
