ALMOND JOY MACAROONS image

Yield 64 cookies

Number Of Ingredients 9

2 pkg sweetened shredded coconut, divided (14oz)
1/2 c all purpose flour
1/2 c sugar
1/2 c cream of coconut (Coco Casa or Coco Lopez)
6 egg whites
4 T unsalted buttr, melted
2 t vanilla extract
2 pinces salt
64 choclate "kiss' candies with almonds, unwrapped

Steps:

  • PREHEAT oven to 350, line baing sheets with parchment Mince 3 c of coconut in food processor (processing a portion of the coconut helps the dough hold together as it's shaped around the chocolate candies.) Transfer minced coconut to a bowl. Add remaining coconut to the minced coconut along with the other ingredients (excpet the chocolate kisses) Mix gently with your hands until combined, then chill dough fo at least an hour and up to 24hrs Shape a heaping Tablespoon of dough around the UNWRAPPED chocolate kiss, enclosing the candy completely. Arrange cooies on a prepared baking sheet 1' apart Bake until firm and deep golden at the base and light golden on the top 16-18 mins
