In a grilled cheese challenge, my husband and I dared to create "dessert" sandwiches. This particular sandwich is the all-American twist on the apple pie. Instead of bread, we use frozen poundcake (thawed), add homemade apple pie filling, and brie cheese.

Steps:
- 1. In a saucepan, combine apples, brown sugar, cinnamon, vanilla, lemon juice, and cornstarch. Cook over medium heat until thick and bubbly. Remove and cool.
- 2. Place 3 slices of brie onto each slice of cake. Place 2-3 TBSP drained apple pie filling on bottom cake. Place on sandwich top. Brush sandwich with melted butter. Grill at 325 degrees for 2-4 minutes. Flip and repeat. If bread is browning too quickly, reduce heat. Grill until cheese melts.
- 3. In a small bowl, stir together apple pie filling juice and honey. Drizzle on plate and serve on the side.
