- 1. PREP/PREPARE
- 2. This recipe required an air fryer, or you could substitute a convection oven.
- 3. I prefer to use my own homemade Cajun/Creole spice mix; however, if I do not have any available, then my store-bought option would be Tony Chachere's. Just remember that most commercial spice mixes are loaded with salt. - 4. The actual cook time will be determined by the thickness of your filet. Mine was about 3/4-inch (1.9cm) in thickness and took 17 minutes.
- 5. If you do a lot of air frying, an almost indispensable chef's tool is a good oil mister.
- 6. Gather your ingredients (mise en place).
- 7. In a small bowl, combine the spice ingredients.
- 8. Rub both sides of the fish with the hot sauce, then brush on the olive oil.
- 9. Cover with the spice/breading mix.
- 10. Lightly brush some oil on the basket of your air fryer (to prevent sticking), then add the filet. Set the temperature to 400 (205c) and cook for 10 minutes.
- 11. Open the basket, lightly brush the top of the filet with some oil, and gently flip over. Close the air fryer and cook an additional 6 - 7 minutes.
- 12. PLATE/PRESENT
- 13. Serve with a great side, like rice, and some tartar sauce. Enjoy.
