Addictive Chorizo Pepper Jack Dip image

This is a favorite of my husband's--excellent game day food! The greatest thing is that the dip doesn't immediately harden like most other cheesy dips. However, it will become a little less smooth once it fully cools off, though there's rarely any left by that point! Cover with aluminum foil if transporting this. I like the dip...

1 lb ground mexican chorizo, cooked and crumbled
8 oz cream cheese, softened
2 c shredded pepper jack cheese
1 red onion, diced
1/3 c mayonnaise
1/2 tsp ground paprika
1 tsp garlic powder
1 stalk(s) green onion, chopped
1/4 tsp ground cayenne

Steps:

  • 1. Preheat oven to 425 degrees F.
  • 2. Mix cream cheese, pepper jack cheese, onion, mayonnaise, garlic powder, and paprika together in a bowl; transfer to a baking dish or pie pan and spread evenly. Bake in the preheated oven until top is brown and bubbling, about 20 minutes.
  • 3. Top with chorizo, green onion, and cayenne.
