Abalos-Style Hamburger Soup (Picadillo Filipino) image

Modified by the Filipinos from Central to South American influences, this fragrant soup is made with ground beef, onions, tomatoes, potatoes, and lots of garlic. Serve as a stew or generously over rice.

1 tablespoon cooking oil
1 onion, diced
4 cloves garlic, minced
1 large tomato, diced
1 pound ground beef
4 cups water
1 large potato, diced
2 tablespoons beef bouillon
2 tablespoons fish sauce
salt and pepper to taste

Steps:

  • Heat the oil in a large pot over medium-high heat. Cook the onion and garlic in the hot oil until the onions are tender. Stir in the tomato; cook until soft, about 3 minutes. Crumble the ground beef into the pan and cook until brown, about 5 minutes. Add the water, potato, beef bouillon, fish sauce, salt, and pepper; reduce heat, cover, and simmer until the potatoes are tender, stirring occasionally, about 30 minutes.
