- 1. Generously butter a cookie sheet with butter. Then set aside. NOTE: Word of caution-MICROWAVES LIKE OVENS VARY IN COOKING DEGREES, temperatures AND LEVELS SOME OF YOU MAY NEED TO ADJUST THE LEVEL OF YOUR MICROWAVE FOR THIS RECIPE. I HAVE NEVER NEEDED TO ADJUST MY MICROWAVE LEVEL SINCE I HAVE BEEN MAKING THIS RECIPE for more than 20 years. MY current MICROWAVE IS A GE ADVANTIUM PROFILE 120, THAT DOUBLES AS A MICROWAVE OR OVEN AND USES 1200 WATTS OF POWER. SO USE YOUR OWN JUDGEMENT. - 2. In a 2 quart microwave safe dish, combine sugar with light corn syrup. Stir to mix and Microwave on high for 4 minutes.
- 3. Stir in peanuts, and microwave on high for 4 more minutes or until lightly brown.
- 4. Stir in butter and Vanilla, blend well, and put back in microwave on high for 2 minutes. Remove and stir in baking soda, and stir gently till light and foamy.
- 5. Pour onto prepared baking pan. Allow to cool for 30 minutes, then break into serving size pieces.
- 6. Notes: This is one of many simple and easy recipes in my cookbook, and it is very tasty & easy to make.
