#1 Pumpkin Spice Cookies image

After I couldn't find my regular pumpkin cookie recipe, I started looking for some recipes to try. I found this recipe on Allrecipes. I haven't made it yet. But, it sounds really good!

2 1/2 c all-purpose flour or unbleached all-purpose flour
1 c rolled oats
4 tsp baking powder
1 1/2 tsp ground cinnamon
1/2 tsp nutmeg
1 tsp pumpkin pie spice
1/2 tsp ground ginger
1/4 tsp salt
2 Tbsp butter
1 1/3 c light brown sugar, packed
2 large eggs
1 tsp vanilla extract
1 can(s) (15 oz) pumpkin puree
1/2 c apple butter
1 c chopped walnuts

Steps:

  • 1. Preheat oven to 375°F. Grease 2 baking sheets.
  • 2. Stir together, in a bowl, first 8 ingredients.
  • 3. Beat butter and brown sugar with an electric mixer, in a large bowl, until smooth. Add 1 egg, and allow it to blend into the mixture, before adding the other egg, along with the vanilla. Add pumpkin and apple butter; continue beating.
  • 4. Mix in the flour mixture, just until incorporated. Fold in walnuts, mixing just enough, to evenly combine. Drop spoonfuls of dough 2 inches apart, onto the prepared baking sheets.
  • 5. Bake, until edges are golden, about 12 minutes. Allow the cookies to cool on the baking sheet for 1 minute, before removing to a wire rack to cool completely. Makes 56 cookies.
