Sauteed Soft-shell Crabs with Garlic and Butter image

3 soft-shell crabs, cleaned and patted dry
Salt and freshly ground black pepper
1 cup flour
2 tablespoon extra-virgin olive oil
3 garlic, sliced
2 tablespoons capers, drained
1/2 cup white wine
1 tablespoon butter
Few chive blades, chopped
Essence, for garnish, recipe follows
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • Season crabs with salt and pepper and dredge in the flour, shaking off excess. Set aside.
  • In a large skillet over medium high heat, add the oil and saute the crabs until soft, about 2 minutes on each side. Remove the crabs and set aside. Add the garlic and cook for 1 minute. Then add the capers and white wine. Cook until wine has reduced to about 1/2. Swirl in the butter and the chopped chives. Season with salt and pepper.
  • Transfer crabs to a plate, spoon sauce over the crabs and garnish with Essence.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

These crispy, plump, and briny soft-shell crabs cook up in just a few minutes, and are then topped with an even quicker lemon-brown butter pan sauce with capers and parsley. It's as pure a celebration of fresh soft-shell crabs as it gets, with nothing extraneous in the way.

1/2 cup all-purpose flour
Kosher salt and freshly ground black pepper
4 large soft-shell crabs, preferably jumbo or "whale" size, cleaned
1 stick (8 tablespoons; 120g) unsalted butter, divided
1 tablespoon drained capers
2 tablespoons (30ml) fresh lemon juice from one lemon
1 tablespoon minced flat-leaf parsley leaves and tender stems

Steps:

  • In a shallow bowl, season flour with salt and pepper. Lightly dredge crabs in the seasoned flour.
  • In a 10-inch stainless steel skillet, melt 4 tablespoons (60g) butter over medium-high heat until foamy. Add crabs, shell-side down, and cook until browned and crisp, about 3 minutes; be careful, as soft-shell crabs sometimes pop in the pan. Flip crabs and cook until crisp and golden on bottom side, about 3 minutes. Transfer crabs to paper towel-lined plates and season lightly with salt.
  • Add remaining 4 tablespoons (60g) butter to the skillet and melt until foaming. Lower heat to medium and cook until the butter turns a medium-brown color, about 2 minutes.
  • Add capers and cook until lightly crisped, about 1 minute. Add lemon juice, swirl to combine, and remove from heat.
  • Stir parsley into pan sauce, season with salt, if needed. Transfer crabs to a serving platter and spoon sauce on top. Serve right away.

1/4 pound butter
1/2 clove garlic
1 green onion
1 pound fresh crabmeat (preferably jumbo lump or lump)
1 tablespoon chives, minced
1 tablespoon parsley, minced
Juice of 1/2 lemon
Toast points, puff pastry shells, salad greens, rice, or croutons, optional

Steps:

  • Gather the ingredients.
  • Melt butter in a large skillet over medium-low heat.
  • Add garlic and green onion to skillet and cook for about 3 minutes. Do not let garlic brown. Stir frequently.
  • Add crabmeat to skillet and toss with garlic and green onion. Cook while stirring gently until thoroughly heated.
  • Sprinkle crabmeat mixture with chopped chives and parsley. Drizzle with lemon juice.
  • Serve crabmeat sauté on a salad or fresh greens, on toast points or baked puff pastry shells, or spoon it over hot cooked rice.

A delicious hot appetizer or main dish, with a buttery garlic and lemon pepper flavor. Very easy, uses inexpensive imitation crabmeat. May serve as is or with a dipping sauce of your choice. Also good on rice or pasta. Great when on toasted Italian bread, or on pizza, especially with a cream sauce

2 teaspoons minced garlic

You can serve this alone, in little crab shells, or use it to fill crepes. I have used either canned or fresh crab meat for this, and also other types of crab, like jumbo lump or snow crab. It will also work with imitation crab, although I don't use that for health reasons.

8-12 oz backfin crab meat, drained and cartilage picked out
3 Tbsp butter
3 Tbsp white wine
1/4 c chopped green onions with tops
salt and freshly ground black pepper

Steps:

  • 1. Prepare crabmeat, then melt butter over medium heat in a 10-inch sauté pan. Sauté crab meat until it just begins to dry out.
  • 2. Add wine, cover, and steam about 8-10 minutes on low heat.
  • 3. Uncover, add green onions, and salt and pepper to taste. Stir over medium heat to desired moistness.

1 pound fresh lump crabmeat
3 tablespoons butter, melted and cooled
2 tablespoons olive oil
2 (8 ounce) filet mignon steaks
coarse sea salt and coarsely ground black pepper to taste

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C). Toss the crabmeat in the melted and cooled butter. Set aside until ready to serve.
  • Pat filets mignons dry and season with salt and pepper. Heat olive oil in large heavy skillet over medium-high heat until hot, but not smoking. Brown filets on both sides, about 3 minutes per side. Transfer filets to an oiled baking pan and roast in the middle of the preheated oven until they start to firm, and are reddish-pink and juicy in the center, about 10 minutes. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Top each filet with the crabmeat and butter mixture.
