TOMATO BASIL SOUP

2 Tablespoons coconut oil or olive oil
2 cups of cooked chicken breast (shredded)
1 cup sweet onion (chopped)
2 cloves garlic (minced)
2 cups chicken or vegetable stock
1 28 oz can of whole plum tomatoes
1 12 oz can of diced tomatoes
1/4 cup basil pesto
Parmesan cheese (grated (optional))

Steps:

  • In a stockpot, add olive oil, garlic and onions and cook on medium heat for about 5 minutes.
  • Stir in stock of choice, tomatoes and diced tomatoes.
  • Brig to a boil.
  • Cover pot and simmer for about 15 minutes.
  • In small batches, add the soup to a blender and blend until smooth.
  • Return the soup to pot and add basil pesto and shredded chicken.
  • Simmer for an additional 5-10 minutes.
  • Top with parmesan cheese if desired
  • ENJOY!!

1 tablespoon butter
½ cup chopped onion
½ cup chopped celery
4 (14.5 ounce) cans chicken broth
1 (14.5 ounce) can vegetable broth
½ pound chopped cooked chicken breast
1 ½ cups egg noodles
1 cup sliced carrots
½ teaspoon dried basil
½ teaspoon dried oregano
salt and pepper to taste

Steps:

  • In a large pot over medium heat, melt butter. Cook onion and celery in butter until just tender, 5 minutes. Pour in chicken and vegetable broths and stir in chicken, noodles, carrots, basil, oregano, salt and pepper. Bring to a boil, then reduce heat and simmer 20 minutes before serving.

I LOVE chicken along with tomato and basil.....heck I just love tomato with basil! I whipped this up last night and hubby loved it so I thought I would post it. Hope you enjoy!!

2 lbs ground chicken (or what ever ground meat you prefer)
14 ounces mushrooms
1 large red onion, chopped
3 garlic cloves, chopped
1 teaspoon olive oil
salt, to taste
pepper, to taste
1/2 cup marsala wine
3 (14 1/2 ounce) cans diced tomatoes, with juice
4 cups chicken broth
7 large basil leaves, chopped (~ 1 cup)
3 green onions, chopped
1 tablespoon olive oil
2 tablespoons Worcestershire sauce
2 tablespoons hot sauce (or less if you don't want a "bite")
1 tablespoon oregano
1/2 cup parmesan cheese, grated
1 cup mozzarella cheese, shredded
1 cup cooked penne (or your choice of pasta)

Steps:

  • Combine meat, mushrooms, onion, garlic, oil, salt, pepper and wine in a pan and sautee until meat is just about done and veggies are soft.
  • While the meat+ are cooking add the remainder of the ingredients to a crock pot or regular pot.
  • When meat is done, add it to the pot.
  • Cook on low on the stove for 2 hours or high in the crock pot for 4 hours.
  • An hour before the soup is done, cook pasta.
  • When ready to eat, add pasta to soup and garnish with shredded mozz. cheese.
  • ENJOY!

1/4 cup butter, cubed
1 medium onion, chopped
2 celery ribs, chopped
2 medium carrots, chopped
3/4 cup coarsely chopped fresh mushrooms
1 garlic clove, minced
1/4 cup all-purpose flour
1-1/2 teaspoons dried basil
1/2 teaspoon salt
2 cartons (32 ounces each) reduced-sodium chicken broth
1 package (12 ounces) frozen home-style egg noodles
4 cups chopped fresh kale
2 cups shredded cooked chicken

Steps:

  • In a Dutch oven, heat butter over medium heat. Add onion, celery, carrots and mushrooms; cook and stir 8-10 minutes or until vegetables are crisp-tender. Add garlic; cook 1 minute longer., Stir in flour, basil and salt until blended; gradually stir in broth. Bring to a boil. Reduce heat; simmer, covered, 10 minutes., Return to a boil; add noodles. Reduce heat; simmer, covered, 15 minutes. Stir in kale and chicken; cook, covered, 6-8 minutes longer or until kale and noodles are tender. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth if necessary.
