Got this off of the "Good Morning America" website after I saw her cook this on the show. This is the best macaroni and cheese I have ever tasted!!

1 tablespoon vegetable oil
1 lb macaroni
8 tablespoons butter
1 tablespoon butter
1/2 cup muenster cheese, shredded
1/2 cup mild cheddar cheese, shredded
1/2 cup sharp cheddar cheese, shredded
1/2 cup monterey jack cheese, shredded
2 cups half-and-half
8 ounces Velveeta cheese, cubed
2 eggs, lightly beaten
1/4 teaspoon seasoning salt
1/8 teaspoon fresh ground pepper

Steps:

  • Preheat oven to 350.
  • Lightly butter a deep 2 1/2 quart baking dish.
  • Fill a large pot with water and bring to a rapid boil.
  • Add macaroni and the 1 TB oil.
  • Cook for 7 minutes, or until somewhat tender.
  • Drain well, and return to the pot.
  • Meanwhile, in a small saucepan, melt 8 TB of the butter.
  • Stir into macaroni.
  • In a large bowl, combine all of the shredded cheeses.
  • To the macaroni, add 1 1/2 cups of shredded cheeses, half and half, the cubed cheese and the eggs, and the seasoned salt and pepper.
  • Transfer to the prepared casserole dish, and top with remaining 1/2 cup shredded cheese.
  • Dot with remaining 1 TB of the butter.
  • Bake for 30-35 minutes or until the edges are golden brown and bubbly.
  • Serve hot.
  • Serves 8.

My family always expects the 'real deal' homemade macaroni and cheese, and this recipe passed the 'family taste test' with flying colors on Easter. However, this time it was much easier to make, using jarred Alfredo sauce instead of homemade white sauce. Try it. It's easy as pie, and FABULOUS!

1 teaspoon salt
1 teaspoon vegetable oil
2 (16 ounce) packages elbow macaroni
2 (15 ounce) jars Alfredo sauce
1 (1 pound) package processed cheese (such as Velveeta®), cubed
1 teaspoon ground black pepper
1 teaspoon paprika
1 (16 ounce) package shredded sharp Cheddar cheese, divided
dry bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 10 1/2x13 1/2-inch baking dish with cooking spray.
  • Bring a large pot of water to a boil; stir 1 teaspoon salt and vegetable oil into boiling water. Gradually stir macaroni into the boiling water and cook, stirring occasionally, until macaroni are tender but still slightly firm, about 10 minutes. Drain well and pour macaroni into prepared baking dish.
  • Pour Alfredo sauce into a 3-quart microwave-safe bowl and stir processed cheese into sauce; microwave on 60 percent power for 6 minutes. Stir sauce mixture and microwave for 5 more minutes on 60 percent power. Season with black pepper and paprika. Stir 1 cup shredded sharp Cheddar cheese into mixture until cheese has melted and sauce is thick and smooth.
  • Pour half the cheese sauce over macaroni and stir to coat; pour in remaining cheese mixture and stir again. Spread remaining shredded sharp Cheddar cheese over macaroni. Top casserole with bread crumbs.
  • Bake in the preheated oven until the casserole is bubbling, 45 minutes to 1 hour. Broil casserole under oven's broiler for 3 to 4 minutes if you like a browned top. Let macaroni and cheese stand for 10 minutes before serving.

This is delicious. A couple of options are to put velveeta slices on top before cooking, and we eat this with a homemade Russian dressing on top, which i don't expect anyone else to do!

1 lb elbow macaroni
1/2 cup butter
1/2 cup flour
salt and pepper
5 cups milk
16 ounces shredded cheddar cheese (we use white)

Steps:

  • Heat oven to 350.
  • Cook macaroni according to package directions; drain.
  • In a large saucepan over medium heat, melt butter.
  • Blend in flour, salt, and pepper; gradually stir in milk.
  • Cook, stirring constantly until mixture thickens and begins to boil.
  • Try to avoid lumps, and don't let anything burn to the bottom of the pan. Add cheese and stir until cheese is melted.
  • In a 3 quart casserole dish, stir together pasta and the cheese sauce.
  • Bake 30 minutes or until bubbly.

1/2 cup mayonnaise
2 tablespoons roasted garlic puree
1/2 teaspoon yellow mustard
1/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
1/8 teaspoon Worcestershire sauce
2 1/2 cups half and half
1/4 cup water
1 teaspoon hot sauce, such as Tabasco
1 teaspoon Worcestershire sauce
10 ounces processed cheese, cubed, such as Velveeta
5 ounces Cheddar, shredded (see Cook's Note)
5 ounces smoked Gouda, rind peeled and shredded
5 ounces provolone, shredded
1 1/2 pounds ground beef (80/20 blend)
1 tablespoon kosher salt
4 slices yellow Cheddar
1/4 cup melted garlic butter (minced garlic and unsalted butter)
4 brioche burger buns
20 thin slices (round) kosher dill pickle
1/4 cup thick-sliced sweet onion
4 thin slices beefsteak tomato
1 cup finely shredded lettuce

Steps:

  • For the donkey sauce: Combine the mayonnaise, roasted garlic puree, mustard, salt, pepper and Worcestershire sauce in a medium bowl. Refrigerate for 30 minutes before using.
  • For the SMC: In a 2-quart saucepan, bring the half-and-half and water to a simmer over medium heat. Maintain medium heat and add the hot sauce and Worcestershire sauce. Using a whisk, mix in the processed cheese 2 ounces at a time until it has fully incorporated.
  • Using the same method of adding the cheese slowly, add in the other cheeses. Continually mix until all the cheese has melted and the sauce is smooth. Once you start mixing in the cheese you must whisk constantly until the cheeses are fully incorporated. Once fully incorporated remove the sauce from the hot saucepan.
  • For the real deal with cheese: Form 4 round burger balls. Sprinkle with salt all over. On a hot griddle, place the burger balls and allow to sear for 45 seconds. Using burger spatulas, smash the burgers to a 1/4-inch thickness. Once the juice comes to the surface, about 1 minute, flip the burgers to a new spot on the griddle.
  • Top each burger with 1 tablespoon of SMC. Cover with 1 slice of Cheddar. Place a dome over the burgers and add water underneath (use a squeeze bottle) to steam and melt the cheese. After about 1 minute remove the dome and remove the burgers from the heat.
  • Spread the melted garlic butter on the cut sides of the buns. Toast both sides of the bun halves until golden brown.
  • To assemble: Spread donkey sauce on the cut sides of the buns, edge to edge (about 6 tablespoons total). On the bottom half of the buns stack in the following order: pickles, onions, burger, then top with tomato, lettuce and place top bun on top. Secure with 6-inch bamboo skewers.

  • Cook macaroni in boiling water until almost tender; drain. Meanwhile, in a Dutch oven, melt butter. Stir in the flour, salt, mustard, pepper and pepper sauce until smooth. Cook for 1 minute or until bubbly. Stir in the macaroni, milk and 4 cups cheese. , Transfer to an ungreased 13x9-in. baking dish. Cover and bake at 350° for 45-50 minutes or until bubbly. Uncover; sprinkle with the remaining cheese. Let stand for 5 minutes before serving.
