My mother-in-law gave me this recipe years ago. My family insist on having this cranberry salad every Thanksgiving. I usually make it the day before Thanksgiving.

Steps:
- Grind cranberries and apples, mix together.
- Add orange juice, pineapple and sugar, let sit until sugar dissolves.
- Pour water over Jello, stir until dissolved, let cool.
- Add Jello to cranberry mixture. Place in refrigerator.

RAW BUTTERNUT SQUASH SALAD WITH CRANBERRY DRESSING
People aren't accustomed to eating raw butternut squash, but when it's grated, it has a wonderful, crunchy quality, and it's also very pretty. Here, a jumble of grated squash is tossed with a dressing made out of fresh cranberries, honey, orange juice and fresh ginger. It's a lively, fresh twist on the traditional mashed and heavily-buttered treatment.

- Combine the cranberries, orange juice and ginger in a small saucepan over medium-low heat. Cover and cook, stirring occasionally, until the berries have begun to break, 10 minutes or so. Remove from the heat and add the oil, honey and some salt and pepper. Stir until well combined.
- Meanwhile, grate the butternut squash by hand or in a food processor. Transfer the squash to a large bowl, add the warm cranberry dressing, and toss to combine everything. Serve warm or at room temperature. (Or cover and refrigerate the salad for up to several hours; bring to room temperature before serving.)

MOM'S RAW CRANBERRY SALAD
We made this every year when I was growing up. I couldn't wait for it to mellow for a few hours; I would just dig in right away. My daughter says she has frozen this with good results. It makes a big batch.

Steps:
- Wash and pick through cranberries.
- Core and quarter apples.
- Seed and quarter orange.
- Grind in food processor starting with the orange, and then add apples and cranberries. You can do in batches so you don't over process it.
- We used a hand crank grinder to make this when I was a child.
- Add sugar (in the 50's we used 2 cups of sugar, so taste after a couple hours and adjust per your personal preferences).
- Let marinate for at least 6 hours or overnight.

RAW CRANBERRY SALAD
This is a tart and sweet fruit salad. I don't really care for the canned cranberries so I make this cranberry salad instead. To me it is better the 2nd day! :) This reciepe is really easy and you can add more or less of any of the other ingredients to suit your taste.

Steps:
- 1. Grind cranberries with a food processor or food mill. Mix cranberries and sugar in a bowl. Cover bowl and let refrigerate at least 1 hour to overnight.
- 2. Core, peel, and dice apple. Add to cranberries. Half or quarter grapes, add to cranberries. Add pecans and marshmallows to cranberries and mix.
- 3. Fold in half of the small tub of cool whip. Use rest of cool whip to top off salad.
