1 cup butter, softened
2/3 cup sugar
1/2 teaspoon almond extract
2 cups all-purpose flour
1/2 cup seedless raspberry jam
GLAZE:
1/3 cup confectioners' sugar
1/2 teaspoon almond extract
1 teaspoon water

Steps:

  • In a large bowl, cream butter, sugar and extract until light and fluffy, 5-7 minutes. Add flour and mix well. Chill for 1 hour., Preheat oven to 350°. Roll into 1-in. balls. Place 2 in. apart on greased baking sheets. Using the end of a wooden spoon handle, make an indentation in the center of each; fill each with 1/4 teaspoon jam. Bake until the edges are lightly browned, 13-16 minutes. Remove to wire racks to cool completely., For glaze, in a small bowl, combine confectioners' sugar, extract and water. Drizzle over cookies.

They are a delicious cookie any time of the year, but especially perfect for the holiday season. Other fillings can be used; any jelly, jam, candied fruit or tinted powdered sugar icing. Our family favorite is raspberry jam.

½ cup butter at room temperature
½ cup vegetable shortening (such as Crisco®)
½ cup brown sugar
2 eggs, separated
1 teaspoon vanilla extract
2 cups all-purpose flour, sifted
½ teaspoon salt
1 ½ cups finely chopped pecans
1 (8 ounce) jar raspberry jam, or as needed

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Beat butter, vegetable shortening, and brown sugar together in a bowl until smooth and creamy; beat in egg yolks and vanilla extract. Retain egg whites for a later step. Stir flour into butter mixture 1 cup at a time; mix in salt.
  • Beat egg whites in a separate bowl; transfer pecans to a shallow bowl. Pinch off and roll dough into 1-inch balls, dip each in beaten egg white, and roll in pecans. Place cookies on an ungreased baking sheet. Use your thumb to form an indention into the top of each cookie and spoon a small amount of raspberry jam into the hollow.
  • Bake cookies in the preheated oven until very lightly browned, 10 to 12 minutes.

Steps:

  • set oven to 325 degrees F.
  • Lightly grease a cookie/baking sheet.
  • In a large bowl using an electric mixer at medium speed beat the butter with vanilla and almond extract (if using) until fluffy.
  • In a bowl combine the confectioners sugar with cornstarch and flour; add to the creamed mixture and beat until smooth and combined.
  • Using hands shape into 24 round balls, then place on cookie sheet about 2-inches apart.
  • Push down slightly using the palm of your hand then make a small indent in the middle of each cookie.

175 g ground almonds
25 g coconut flour
5 tablespoons coconut oil
1 medium egg
80 g honey
1 teaspoon almond extract
1 teaspoon baking powder
100 g raspberries
2 teaspoons honey

Steps:

  • In a mixing bowl - mix together the ground almonds, coconut flour and baking powder until combined.
  • In a separate bowl - mix together 80g/3oz of the honey with the egg, coconut oil and almond extract until fully combined.
  • Slowly add the bowl of wet ingredients to the dry ingredients, mixing as you go, until a sticky dough is formed. Leave to rest for 10 minutes.
  • Preheat the oven to 160C/320°F.
  • Add the raspberries and remaining honey to a saucepan and gently heat, over a medium heat, mixing and mashing the raspberries as you go. Once all the raspberries are mashed and well combined with the honey, reduce the heat to a simmer and leave for 5 minutes, stirring occasionally.
  • Divide the dough mixture into 14 equal parts and roll into balls. Place on a baking tray lined with parchment paper, then flatten each of the balls and use your thumb to make a small hole in the centre.
  • Fill the holes with the raspberry mixture then bake in the oven for 8-10 minutes.
  • Store in an airtight container and refrigerate (should last for up to 4 days).

These are a very easy thumbprint cookie to make as they use a packaged cookie mix. They look pretty around the Holidays. You can use green drizzle (made with the white chocolate chips in recipe with added green food coloring) with the raspberry jam & they look great or even use colored red or green sugar. You can also use apricot or any other flavor jam you desire in making these if raspberry not your thing. Got the recipe from Shoprite website and have been using it ever since.

How to make Raspberry Almond Shortbread Thumbprint Cookies

2 1/4 cups all-purpose flour
1/4 tsp salt
1 cup unsalted butter, cold and diced into 1 Tbsp pieces
2/3 cup granulated sugar
1/2 tsp almond extract
1/2 cup raspberry jam, seedless if preferred
1 cup powdered sugar
1 tsp almond extract
2 - 4 tsp water

Steps:

  • Preheat oven to 350 degrees. In a mixing bowl whisk together flour and salt, set aside.
  • In the bowl of an electric stand mixer fitted with the paddle attachment, blend together butter and sugar until combined (it will take a minute or two since the butter is cold. If you don't have a paddle attachment that constantly scrapes bowl, then occasionally stop mixer and scrape down sides and bottom of bowl). Mix in almond extract then add in flour blend until mixture comes together (it will take a bit of mixing since the butter is cold, so be patient, it will seem really dry at first).
  • Shape dough into 1-inch balls, about 1 Tbsp each, and place 2-inches apart on ungreased baking sheets. Make a small indentation with thumb or forefinger in each cookie (large enough to fit 1/4 - 1/2 tsp of jam). Fill each with 1/4 - 1/2 tsp jam. Chill in refrigerator 20 minutes (or freezer for 10 minutes). Bake in preheated oven 14 - 18 minutes.
  • Cool several minutes on baking sheet then transfer to a wire rack to cool (at this point you can add a little more jam if you'd like to, it just won't be set like the other is). Drizzle cookies with glaze when when cool. Store cookies in an airtight container.
  • For the glaze:
  • Whisk all glaze ingredients together in a small mixing bowl, adding enough water to reach desired consistency. Pour or spoon mixture into a sandwich size resealable bag, cut a small tip from one corner and drizzle over cookies.

1/4 cup icing sugar
2/3 cup seedless raspberry jam

Steps:

  • Preheat oven to 375°F (190°C). Combine flour, baking soda and salt in a medium bowl; set aside.
  • Mix margarine with sugars in large bowl. Mix in eggs and vanilla until blended. Gradually add in flour mixture; mix just until blended. Stir in almonds and lemon peel. Drop by tablespoonfuls on ungreased baking sheets, 2 inches (5 cm) apart.
  • Bake 7 minutes or until edges are golden. Immediately make an indentation in centres of cookies with the back of a round measuring spoon. Cool cookies on sheets for 2 minutes on a wire rack; remove cookies from sheets and cool completely.
  • Sprinkle with icing sugar, then fill indentations evenly with jam; about a half teaspoon each.

These cookies are a crowdpleaser and so easy! Use any of your favorite types of jam and enjoy!

1 cup(s) butter, softened
2/3 cup(s) sugar, white
1 dash(es) salt
2 cup(s) all purpose flour
2 teaspoon(s) orange zest
1/2 cup(s) seedless raspberry jam
2 tablespoon(s) orange juice, fresh
3/4 cup(s) powdered sugar

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl cream together butter, sugar, salt and orange zest. Sift in flour and mix until just combined.
  • Roll one inch balls of dough and place on a ungreesed cookie sheet. Make a small hole in the center of each ball using your thumb or finger. Fill with jam and bake for 10 to 12 minutes or until golden brown around the edges.
  • In a small bowl mix together orange juice and powdered sugar. Drizzle onto the cooled cookies and let dry.
  • Enjoy!

1/2 cup raspberry jam or jelly
1 tablespoon Chambord or kirsch
2 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 sticks (1 cup) butter, at room temperature
2/3 cup sugar
2 large egg yolks
1 tablespoon finely grated lemon zest
1 tablespoon fresh lemon juice
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter 2 large baking sheets. In a small bowl, combine the jam and Chambord. Stir to combine. In a medium bowl, combine the flour, baking powder, and salt and whisk to blend. In a large bowl using an electric mixer, beat the butter and sugar until light and creamy. Beat in the egg yolks, lemon zest, lemon juice and vanilla. Add the flour mixture in 2 additions and beat just until moist clumps form. Gather the dough together into a ball. Pinch off the dough to form 1-inch balls. Place on the prepared baking sheets, spacing 1-inch apart. Use your floured index finger or 1/2 teaspoon measuring spoon to create depressions in the center of each ball. Fill each indentation with nearly 1/2 teaspoon of the jam mixture. Bake until golden brown, about 20 minutes. Transfer the cookies to wire racks to cool completely.

FUDGE RASPBERRY THUMBPRINT COOKIES

Crisco® Original No-Stick Cooking Spray
1/2 cup firmly packed light brown sugar
1 Crisco® Butter Flavor All-Vegetable Shortening Sticks, cut into slices
1 cup Crisco® Butter Shortening
3 large eggs, separated
2 tablespoons water
1 1/2 teaspoons vanilla extract
1/4 teaspoon salt
2 cups Pillsbury BEST® All Purpose Flour
2 cups finely chopped pecans
1/2 cup Smucker's® Hot Fudge Spoonable Ice Cream Topping
1/2 cup Smucker's® Seedless Red Raspberry Jam

Steps:

  • HEAT oven to 350 degrees F. Adjust rack to middle position. Coat two cookie sheets lightly with no-stick cooking spray.
  • BEAT brown sugar and shortening in medium bowl with an electric mixer at medium speed for 2 minutes or until fluffy. Scrape down sides of bowl. Add egg yolks, water, vanilla and salt. Beat until well combined. Add flour on low speed until well blended.
  • BEAT egg whites in a shallow bowl until foamy. Place pecans in a separate shallow bowl. Measure about 2 teaspoons dough for each cookie. Form into balls by rolling between your palms. Dip each dough ball into egg whites, then roll into pecans. Place on the prepared cookie sheet. Using the back of a teaspoon or your thumb, make a rounded indentation in the top of each cookie.
  • BAKE 10 minutes. Remove from oven. It may be necessary to create the indentation once again with a spoon. Place about 1/2 teaspoon hot fudge topping into the indentation of each cookie. Then place about 1/2 teaspoon jam on top of the hot fudge. Bake an additional 5 to 7 minutes or until lightly browned. Remove from oven. Allow cookies to cool on baking sheet for several minutes. Remove to cooking rack to cool completely.

1 1/4 C. walnuts, processed in Cuisinart for 15 seconds, (set aside in bowl)
1 1 /4 C. quick cooking oats
1 C. flour
1/4 tsp. salt
6 Tbsp. unsalted butter
1/2 C. Crisco (solid veg.shortening)
1/2 firmly packed brown sugar
1 large egg yolk
1 1/2 tsp. vanilla
Raspberry or Apricot Preserves

Steps:

  • In med. bowl, mix together oats, flour and salt. In lge. bowl, beat butter, shortening & brown sugar at med-high speed til light and creamy. Beat in one lge. egg yolk and vanilla. Add oat mix to butter/sugar mix at low speed til just blended. Pinch off dough - roll into 3/4 - 1" balls (I think they are better on the small side) Roll in ground walnuts, coating completely Place on ungreased cookie sheet/flatten slightly with palm of hand; then press thumb into center to form indentation. Spoon scant 1/2 tsp. raspberry preserves into indentation, filling it. Arrange 1 1/2" apart. Bake @ 350 for 15 minutes til golden brown. Dust w/confectioners sugar and cool.
