RASPBERRY MOJITO PUNCH

Number Of Ingredients 9

1/4 cup sugar
1/4 cup lightly packed fresh mint leaves
3 cups cold water
1 1/2 cups white rum
1 can frozen raspberry juice blend concentrate, thawed, 12 oz
1/2 cup lime juice
1 1/2 cups carbonated water, chilled
ice cubes
fresh raspberries, lime slices, and/or fresh mint, optional

Steps:

  • 1. In punch bowl, mix sugar and the 1/4 cup mint. Using the back of a wooden spoon, lightly crush mint by pressing it against the side of the bowl.
  • 2. Add the cold water, rum, juice concentrate and lime juice, stirring til sugar is dissolves. Cover punch bowl and chill for up to 24 hours. If serving today omit the chilling.
  • 3. Slowly pour carbonated water down side of bowl; stir gently. Add ice cubes. If desired, add raspberries, lime slices, and/or fresh mint sprigs. Makes 8 eight oz. servings. For virgin raspberry mojito punch, prepare as above but omit rum and increase carbonated water to 3 cups.

3 cups club soda, chilled
1 cup ice cubes
1 cup fresh raspberries

Steps:

  • Combine sugar and mint. Using the back of a wooden spoon, lightly mash the mint by pressing it against the side of the bowl. Add the cold water, raspberry juice blend, and lime juice, stirring until sugar dissolves. Stir in club soda and ice cubes. Add raspberries and lime slices.

1/4 c lightly packed fresh mint leaves
3 c cold water
1 1/2 c white rum
1 12-oz. can frozen raspberry juice blend concentrate, thawed
1/2 c fresh lme juice
1 1/2 c carbonated water, chilled
fresh raspberries and/or lime slices (optional)

Steps:

  • 1. In a large bowl combine sugar and mint. Using the back of a wooden spoon, lightly crush mint against the side of the bowl. Add next 4 ingredients (through lime juice), stirring to dissolve sugar. Pour mixture into a large pitcher.
  • 2. Slowly pour carbonated water down side of pitcher and if desired, add additional fresh mint, raspberries, and or lime juice. Serve immediately.
