RASPBERRY CREME BRULEE

1 pint raspberries
1 cup sugar, plus more for sprinkling
2 cups heavy cream
1 cup half-and-half
Pinch fine salt
1 vanilla bean
8 large egg yolks, at room temperature

Steps:

  • Position a rack in the center of the oven and preheat to 300°F. Place four 9-ounce ramekins in a roasting pan. Bring a large pot of water to a boil and keep hot until ready to use.
  • Set aside 12 of the raspberries and cook the rest with 1/2 cup of the sugar in a small saucepan over medium-high heat until the sugar has dissolved, the berries have broken down completely and the mixture starts to thicken, about 10 minutes. Let cool completely.
  • Put the cream, half-and-half and salt in a medium saucepan. Split the vanilla bean in half lengthwise, scrape out the seeds with the back of a paring knife and add them, along with the bean, to the cream mixture. Bring the mixture to a boil over medium-high heat; immediately remove from the heat, cover and set aside.
  • Combine the egg yolks with the remaining 1/2 cup of sugar in a large bowl and whisk until the mixture is pale yellow and thick. Whisking constantly, slowly pour in the hot cream mixture until well combined. Pour the custard through a fine-mesh strainer into a clean medium bowl and discard the vanilla bean.
  • Spoon 2 tablespoons of the raspberry coulis into each ramekin and spread to cover the bottom. Carefully ladle the custard into the ramekins, dividing evenly, and place the roasting pan in the oven. Carefully pour the hot water into the roasting pan until it reaches about 2/3 of the way up each ramekin. Bake until the custard is just set and still slightly jiggles, about 55 minutes. Immediately transfer the ramekins to a rack to cool to room temperature, then chill, uncovered, for 3 hours up to 2 days.
  • Just before serving, place the ramekins on a rimmed baking sheet and sprinkle sugar (about 1 tablespoon) over the top of each custard, tilting to spread evenly. Wipe off the ramekins with a moist paper towel. Using a torch, carefully caramelize the sugar until it is melted and a deep golden color. Once the sugar has hardened, garnish each custard with 3 of the reserved raspberries and serve.

Steps:

  • Place chocolate in a large bowl. In a large saucepan, bring cream and 1/2 cup sugar just to a boil. Pour over chocolate; whisk until smooth. Slowly stir hot cream mixture into egg yolks; stir in vanilla., Place 3 raspberries in each of 10 ungreased 6-oz. ramekins or custard cups. Evenly divide custard among ramekins. Place in a baking pan; add 1 in. of boiling water to pan. Bake, uncovered, at 325° for 40-50 minutes or until centers are just set (custard will jiggle). Remove ramekins from water bath; cool 10 minutes. Cover and refrigerate for at least 4 hours., Combine brown sugar and remaining sugar. If using a creme brulee torch, sprinkle custards with sugar mixture. Heat sugar with the torch until caramelized. Serve immediately. If broiling the custards, place ramekins on a baking sheet; let stand at room temperature for 15 minutes. Sprinkle with sugar mixture. Broil 8 in. from the heat until sugar is caramelized, 4-7 minutes. Refrigerate until firm, 1-2 hours. If desired, top with additional fresh raspberries.

1 vanilla pod
½ lemon , pared zest only
300ml double cream
100g raspberries
4 egg yolks
2 tbsp golden caster sugar
2 tbsp demerara sugar

Steps:

  • Split the vanilla pod and scrape the seeds into a pan with the lemon zest and cream. Toss the pod in too. Heat until just before the cream boils - tiny bubbles will be forming at the edges. Turn off the heat and infuse for 15 mins.
  • Heat oven to 160C/140C fan/gas 3. Put four ramekins into a roasting tin and fill the tin with boiling water so that about 2cm of the ramekins is uncovered.
  • Divide the raspberries between the ramekins, reserving a few. Whisk the egg yolks and caster sugar, using an electric whisk, until very pale and fluffy, about 3 mins. Remove the zest and vanilla pod from the cooled cream, then slowly stir it into the egg mixture. Transfer to a jug and pour through a sieve into the ramekins, then top with the reserved raspberries. Bake in the oven for 20-25 mins until the custard forms a skin and holds a slight wobble when you nudge the tray. Allow to cool, then chill in the fridge for at least 4 hrs.
  • If you don't have a blowtorch, heat the grill to high. Sprinkle demerara sugar over each ramekin and either use a blowtorch to caramelise the top or place them under the grill until the sugar has melted and crisped. Allow to settle for 5 mins before serving.

4 extra - large egg yolks
1/2 cup sugar, plus 1 tablespoon for each serving
3 cups heavy cream
1 teaspoon cardamom
2 tablespoons framboise liqueur
1 teaspoon pure vanilla extract
1/2 pint fresh raspberries

Steps:

  • Preheat the oven to 300 degrees F.
  • In the bowl of an electric mixer fitted with the paddle attachment, mix the egg, egg yolks, and 1/2 cup of the sugar together on low speed until just combined. Meanwhile, scald the cream in a small saucepan until it's very hot to the touch but not boiled. Add the cardamom and mix well. With the mixer on low speed, slowly add the cream to the eggs. Add the framboise and vanilla. Distribute the raspberries among 6 (6 to 8 - ounce) ramekins and then pour the custard mixture into the ramekins until they're almost full. (I use a large glass measuring cup for easy pouring.)
  • Place the ramekins on a sheet pan and carefully pour hottest tap water into the pan to come halfway up the sides of the ramekins. Bake for 35 to 40 minutes, until the custards are just set when gently shaken. Remove the custards from the water bath, cool to room temperature, cover and refrigerate until cold.
  • To serve, spread 1 tablespoon of sugar evenly on the top of each ramekin and heat with a kitchen blowtorch until the sugar caramelizes evenly. Allow to sit at room temperature for a minute until the caramelized sugar hardens.

My favorite creme brulee recipe with white chocolate and raspberry. It's pretty simple compared with some I've seen and tried. My young son likes all the stirring involved and loves to help make this treat.

2 ½ tablespoons seedless raspberry jam
2 cups heavy cream
8 (1 ounce) squares white chocolate, chopped
½ cup white sugar
6 large egg yolks, at room temperature
1 teaspoon vanilla extract
1 pinch salt
2 tablespoons white sugar

Steps:

  • Preheat the oven to 300 degrees F (150 degrees C).
  • Divide jam evenly among 8 ramekins; spread to cover bottom. Place ramekins in a large baking dish pan with 2-inch (or larger) sides.
  • Combine cream and white chocolate in a pan over medium-low heat. Stir constantly until chocolate has melted, about 5 minutes. Add 1/2 cup sugar and stir until dissolved; do not boil. Remove from the heat.
  • Mix egg yolks, vanilla, and salt together in a bowl with a pour spout. Add cream mixture in slowly, whisking all the white. Pour mixture evenly on top of jam in the ramekins. Fill the outer pan with hot water so it's at least halfway up the outsides of the ramekins; this water bath will keep the egg from becoming rubbery and will keep your custard smooth.
  • Bake in the preheated oven until mixture is set but still a little wobbly in the middle; 40 to 45 minutes. Remove from the oven and transfer ramekins to a cooling rack to cool to room temperature, about 30 minutes. Place in the refrigerator to chill, at least 1 hour.
  • Remove ramekins from the refrigerator. Sprinkle about 1 teaspoon sugar evenly over the top of each custard. Fire custards with a kitchen torch until sugar is liquefied and starts to brown. Allow crust to harden for about 2 minutes, then serve immediately.

⅓ cup long-grain rice
1 ⅓ cups heavy whipping cream

½ vanilla bean, split lengthwise

Steps:

  • Combine water and salt in a saucepan. Bring to a boil and add rice. Reduce heat, cover, and simmer until rice has absorbed all the water, about 20 minutes. Remove from heat to cool; fluff with a fork.
  • Preheat oven to 300 degrees F (150 degrees C).
  • Pour cream and half-and-half into a saucepan. Scrape the vanilla bean seeds into cream mixture; add the bean pod. Bring mixture to a simmer; remove from heat. Remove and discard vanilla bean.
  • Whisk egg yolks and 1/3 cup sugar together in a bowl; gradually whisk in cream mixture. Fold rice into egg-cream mixture.

1 ounce good-quality white chocolate (such as Lindt or Baker's), finely chopped

1/4 teaspoon vanilla extract
2 teaspoons sugar

Steps:

  • For crusts:
  • Blend flour, sugar and salt in processor. Add butter and ginger and process using on/off turns until mixture resembles coarse meal. Add ice water and blend until moist clumps form. Gather dough into ball and divide into 2 pieces. Flatten each into disk and wrap in plastic. Chill until firm, about 1 hour. (Can be made 1 day ahead. Keep refrigerated.)
  • Preheat oven to 375°F. Roll out each dough disk on lightly floured surface to 6-inch round. Press into each of two 4 1/2-inch tartlet pans with removable bottoms. Trim overhang to 1/2 inch. Fold overhang in, pressing to form double-thick sides. Pierce crusts all over with fork. Freeze 15 minutes. Bake crusts until golden, piercing with fork if crusts bubble, about 25 minutes. Transfer to rack. Immediately spoon 1/2 tablespoon preserves over bottom of each crust. Cool completely. Reduce oven temperature to 350°F.
  • For custard:
  • Bring cream to simmer in heavy medium saucepan. Remove from heat, add white chocolate and whisk until melted. Whisk yolks and vanilla in medium bowl. Slowly whisk cream mixture into yolks to blend well. Divide custard between crusts. Bake tartlets until center is just set, about 20 minutes. Cool on rack. Chill tartlets overnight.
  • Preheat broiler. Sprinkle each tartlet with 1 teaspoon sugar. Broil just until sugar melts and browns, covering crusts with foil to prevent burning, about 2 minutes. Refrigerate tartlets until cold, at least 1 hour and up to 3 hours. Arrange raspberries around edge of tartlets.

CHOCOLATE MANGO-RASPBERRY CREME BRULEE

5 ounces semisweet chocolate
3 cups heavy cream
1/2 cup sugar
1 tablespoon framboise
8 large egg yolks
1 pint raspberries
1 ripe mango, cut into 1/2-inch dice

Steps:

  • Preheat oven to 300 degrees. In a dry bowl, melt the chocolate over barely simmering water. Remove from heat. In a medium saucepan, combine the cream and 1 tablespoon of sugar. Bring to a scald. Meanwhile, put the remaining sugar, framboise and egg yolks in a large bowl and whisk just to blend. While gently whisking the yolks, drizzle the hot cream into them to gradually warm them up. Whisk in the warm chocolate. Strain into a pitcher. Divide the custard among 8 ramekins. Add 1/3 of the berries and 1/3 of the mango cubes. Dunk each piece of fruit so that it is completely coated with custard. Skim any bubbles off the surface. Put the cups in a roasting pan and add enough hot water to come halfway up the sides of the cups. Tightly cover the pan with foil and bake 35 to 45 minutes. They should still jiggle slightly but their surfaces should be set. Let cool to room temperature in the bath then remove the custards and refrigerate for at least 4 hours or overnight. To serve, sprinkle on some sugar and melt with tip of a propane torch flame. While still hot, sprinkle on the rest of the raspberries and mango.

1 1/2 sticks (3/4 cup) cold unsalted butter
2 cups all-purpose flour
3/4 cup pecans (about 3 ounces)
3 tablespoons granulated sugar
1/2 teaspoon salt
1/4 cup milk
For filling
1 stick (1/2 cup) unsalted butter
1 1/2 cups granulated sugar
1/3 cup fresh lemon juice
3 whole large eggs
3 large egg yolks
2 tablespoons freshly grated lemon zest (from about 1 1/2 lemons)
3/4 cup mascarpone cheese (about 6 ounces)
6 tablespoons heavy cream
For sauce
1 1/2 cups fresh or thawed frozen raspberries (not in syrup)
2 tablespoons granulated sugar
1 tablespoon fresh lemon juice
1/2 cup superfine granulated sugar

Steps:

  • Make shells:
  • Cut butter into 1/2-inch pieces. In a food processor combine flour, pecans, sugar, and salt and pulse until finely ground. Add butter and pulse until mixture resembles coarse meal. Add milk and pulse until a dough just forms. Form dough into a flattened disk and chill, wrapped in plastic wrap, at least 1 hour and up to 1 day.
  • Press dough (about 1/3 cup for each shell) onto bottoms and up sides of eight 4 1/2-inch fluted tart pans with removable rims. Prick bottoms of shells all over with a fork. Freeze shells 1 hour.
  • Preheat oven to 350°F.
  • Arrange shells in a shallow baking pan and bake in middle of oven 18 minutes, or until golden. Cool shells in pans on a rack. Shells may be made 1 day ahead and kept, covered, at room temperature.
  • Make filling:
  • In a heavy saucepan combine butter, 3/4 cup sugar, and lemon juice over moderately high heat, stirring occasionally until butter is melted. Bring mixture to a boil, stirring, and remove pan from heat. In a bowl whisk together whole eggs, yolks, and remaining 3/4 cup sugar until thick and pale. Add hot butter mixture in a stream, whisking constantly, and transfer to pan. Cook mixture over moderate heat, stirring constantly, until thick and just beginning to boil. Pour mixture through a fine sieve into a heatproof bowl and stir in zest. Cool lemon mixture completely, its surface covered with buttered wax paper, and chill at least 8 hours and up to 1 day.
  • In another bowl with an electric mixer beat together mascarpone and cream until thick and smooth. Fold in 1 1/2 cups lemon mixture, reserving remainder for another use, until combined well.
  • Divide filling among shells, smoothing tops. Chill tarts, loosely covered, at least 1 hour and up to 1 day.
  • Make sauce:
  • In a blender puree sauce ingredients and pour through a fine sieve into a bowl, pressing on solids.
  • Sprinkle about 1 tablespoon superfine sugar evenly over each tart and caramelize with a blowtorch, moving flame evenly back and forth over sugar (not crust) until melted and caramelized, about 30 seconds. (Alternatively, caramelize sugar under a preheated broiler. If using broiler, cover crusts with pieces of foil to prevent burning.)
  • Serve tarts with raspberry sauce.

  • Position oven rack in the middle of the oven; preheat oven to 325°; lightly butter or spray the ramekins.
  • In a saucepan over low heat, heat the cream, ½ cup of sugar, honey, and chocolate until hot and steam rises, stirring occasionally, about 5 minutes; do not boil.
  • In a big bowl, whisk the egg yolks until slightly thickened; slowly add the warm cream mixture, whisking constantly.
  • Set the ramekins in a large baking pan lined with a dish towel.
  • Place several berries and a dash of chambord into each ramekin.

1 pinch salt
1/4 cup confectioners' sugar
6 tablespoons butter, diced
2 egg yolks
freshly grated orange zest (from 1 orange)
1 tablespoon egg white, lightly beaten

Steps:

  • Pastry:.
  • Sift the flour, salt and confectioners' sugar into a bowl. Rub in the butter using your fingertips until the mixture resembles fine breadcrumbs. Mix together the egg yolks and orange zest, add to the dry ingredients and mix to a soft dough.
  • Knead the pastry with our fingertips on a lightly floured work surface for a few seconds until smooth. Wrap in plastic wrap and chill for 30 minutes.
  • Roll out the pastry and use to line a fluted 9-inch quiche pan. Wrap in plastic wrap and chill for 30 minutes. Put a baking sheet in the oven and prehat to 400°F.
  • Prick the base of the pastry with a fork and line with foil and ceramic baking weights (or dry beans). Place on the hot baking sheet and bake for 10 minutes.
  • Remove the foil and beans and bake the pastry for 5 minutes more.
  • Lightly brush the base and sides of the pastry with egg white, then return to the oven for 3-4 minutes. Lower the oven temperature to 325°F.
  • Custard:.
  • Halve the vanilla bean lengthwise. Place in a small pan with the cream. Slowly bring to a boil, then remove the vanilla bean.
  • In a large bowl, whisk the egg and egg yolks with the sugar until pale. Slowly whisk in the hot cream.
  • Arrange the raspberries in the pastry. Pour the custard over the raspberries, then bake for 20 minutes, or until very lightly set. Place on a wire rack to cool, still in the tin. Chill for at least 4 hours, or overnight if possible.
  • To add the brulee topping, first protect the edges of the pastry with pieces of foil. Dredge a thin layer of confectioners' sugar over the custard. Broil for 1 minute, or until the sugar melts and turns golden. Do not over bake/broil or the custard will separate. Chill for 10 minutes before serving.

2 tablespoons non-fat powdered milk
3/4 cup thawed egg substitute
1/3 cup sugar, plus
2 tablespoons sugar
1 teaspoon vanilla
36 -42 fresh raspberries

Steps:

  • Stir together 1/2 cup non-fat milk and non-fat milk powder until blended.
  • Stir in remaining non-fat milk, egg substitute, 1/3 cup sugar and vanilla.
  • Place 5 to 7 raspberries in bottom of each of 6 (5-ounce) custard cups.
  • Pour custard mixture over raspberries.
  • Bake in pan filled with hot water to 1-inch depth in 325-degree oven about 35 minutes or until custard is set.
  • Chill.
  • Fifteen minutes before serving, sprinkle 1/2 teaspoon sugar over top of each custard.
  • Place cups on baking sheet and broil 4 inches from heat until sugar is caramelized.

1 can (21 ounces) raspberry pie filling
1-1/2 cups heavy whipping cream
6 large egg yolks
6 tablespoons sugar
1/4 cup coarse sugar

Steps:

  • Preheat oven to 325°. Coat six 6-oz. ramekins or custard cups with cooking spray. Spoon a scant 3 tablespoons pie filling into the bottom of each ramekin; set aside., In a small saucepan, heat cream until bubbles form around sides of pan. In a small bowl, whisk egg yolks and sugar. Remove cream from heat; stir a small amount of hot cream into egg mixture. Return all to pan, stirring constantly., Pour into prepared ramekins. Place in a baking pan; add 1 in. of boiling water to pan. Bake, uncovered, 30-35 minutes or until centers are just set (mixture will jiggle). Remove ramekins from water bath; cool 10 minutes. Spoon remaining pie filling over tops. Cover and refrigerate at least 4 hours., If using a creme brulee torch, sprinkle custards with coarse sugar. Heat sugar with the torch until caramelized. Serve immediately., If broiling the custards, place ramekins on a baking sheet; let stand at room temperature 15 minutes. Sprinkle custards with coarse sugar. Broil 8 in. from heat for 4-7 minutes or until sugar is caramelized. Refrigerate 1-2 hours or until firm.

Meyer Lemon Creme Brulee w. Raspberries & Blueberries
adapted from The Craft of Baking by Karen DeMasco
Serves 6
2 C. heavy cream
1/4 c. plus 2 tbsp sugar
1/2 tsp pure vanilla extract
finely grated zest of 4 lemons
1/4 c. strained freshlemon juice
1/2 tsp kosher salt
4 large egg yolks
1 c. raspberries
1 c. blueberries
additional sugar
Prepare an ice bath in a large bowl.
In a medium saucepan, bring the cream, sugar, vanilla and lemon zest just to a boil. Remove the pan from the heat and pour the mixture ino a medium bowl. Set the bowl into the ice bath and stir until the mixture has cooled. Once cooled, removed the bowl from the ice bath, and whisk in the lemon juice and salt. Cover, and refrigerate overnight.
In a large bowl, whisk the egg yolks. Pour about one third of the chilled cream mixture into the yolks, and whisk together well. Add the remaining cream mixture and whisk to combine. Strain the mixture through a fine-mesh sieve into a bowl.
Position a rack in the center of the oven and preheat oven to 275
Place 6 ramekins in 9x13x2 baking pan. scatter the raspberries and blueberries in a single layer in each ramekin. Divide the custard mixture among the ramekins. Place the prepared baking pan in the oven, and carefully pour enough hot water into the pan to come halfway up the ramekins. Be careful not to dilute the custard mixture with the hot water.Cover with foil.
Bake in the water bath for 25-30 minutes, or until just set.
Let the custards cool to room temperature, then chill until they are ready to be served.
Just before serving, sprinkle sugar evenly over the tops of each custard and caramelize

48 raspberries
5 egg yolks
1/3 cup (75ml) sugar
pinch of salt
1 cup (250ml)each 35% cream and whole milk
1 bar (100g) good quality white chocolate, finely chopped
1/4 cup (50ml) packed brown sugar

Steps:

  • Preheat oven to 300 F(150C0. Place seven raspberris in bottom of each of six 1/2 cup(125ml) ramekins. Place ramekins in a shallow roasting pan In a medium bowl, whisk together egg yolks sugar and salt until well combined. In a medium saucepan, heat cream and milk until just simmering. Remove saucepan from heat and whisk in white chocolate until it is melted and smooth. Gradually whisk warm cream into egg yolk mixture. Strain mixture through a fine mesh sieve into a pitcher. Pour custard into ramekins dividing evenly. Pour enough boiling water into roasting pan to come halfway up sides of ramekins. Bake for about 1 hour until centres of custards are just set. Remove ramekins from roasting pan and cool to room temperature on a wire rack. Cover and refrigerate for at least 3 hours. Just before serving, sprinkle brown sugar evenly over tops of custards to cover competely. Ignite a blowtorch and caramelize sugar moving torch constatnly so sugar doesn't burn. You can also broil for 1 minute if you do not have a blowtorch until caramelized. Garnish with remaining raspberries

2/3 cup superfine sugar
1/2 cup dry champagne
1/2 cup heavy cream
3 tablespoons powdered sugar, sifted
raspberries, for garnish (dusted with powdered sugar)

Steps:

  • Divide the raspberries among 6 (3/4 cup) ramekins or custard cups.
  • Add the egg yolks and sugar to a bowl and set it over a saucepan of simmering water (make sure the water does not touch the bottom of the bowl.
  • Whisk the egg yolks and sugar until light and foamy, then gradually whisk in the champagne and then the cream.
  • Continue whisking for about 20 minutes until the custard is very thick and bubbly.

1 vanilla bean, split lengthwise
4 large egg yolks, beaten to blend

2 ½-pint containers raspberries
8 tsp golden brown sugar

Steps:

  • Mix 2 cups milk, sugar, and rice in large saucepan. Scrape in seeds from vanilla bean; add bean. Stir over medium-high heat until sugar dissolves and mixture comes to simmer. Reduce heat to medium; simmer 10 minutes, stirring often. Mix in 2 cups milk. Increase heat; bring to boil. Reduce heat; simmer until thickened, stirring often, about 12 minutes. Add 2 cups milk; return to boil. Reduce heat; simmer until rice is tender and pudding is thick and reduced to 4½ cups, stirring often, about 8 minutes. Remove from heat. Quickly whisk in yolks. ¾ c. sugar
2 tsp. raspberry liqueur (optional)
5 egg yolks
2 c. whipping cream
¼ tsp. vanilla extract
5 tbs. unsalted butter
1/3 c. firmly packed brown sugar

Steps:

  • Gently toss berries with ¼ cup sugar and liqueur in bowl. Divide berries among six ¾-cup ramekins or custard cups. Whisk egg yolks and remaining ½ cup of sugar in heavy medium saucepan until pale and thick, about 3 minutes. Add cream and vanilla. Set saucepan over medium jet and stir until custard thickens and leaves a path on the back of a spoon when finger is drawn across, about 7 minutes; do not boil. Add butter and stir until melted. Carefully spoon over berries. Cover and refrigerate at least 4 hours or overnight. Preheat broiler. Press brown sugar through sieve over custards. Boil until sugar begins to melt and caramelize, about 2 minutes. Chill 3 hours.

1/2 teaspoon finely grated fresh orange zest
3/4 cup fresh orange juice
1/2 teaspoon fresh lemon juice
1/4 teaspoon vanilla
6 tablespoons mint sugar
12 large firm-ripe figs (about 1 1/2 pounds)
6 ripe apricots (about 10 ounces)
1 1/4 cups raspberries (about 1 1/2 half-pints)
6 tablespoons turbinado sugar, such as Sugar in the Raw, or packed light brown sugar
Accompaniment: crème fraîche

Steps:

  • In a small bowl stir together zest, citrus juices, vanilla, and mint sugar.
  • Butter six 1-cup shallow flameproof gratin dishes or bowls. Quarter figs. Halve and pit apricots. Divide figs, apricots, raspberries, and juice mixture among dishes or bowls.
  • Just before serving, sprinkle sugar evenly over fruit and caramelize with blowtorch, moving flame evenly back and forth just over sugar (alternatively, broil fruit under a preheated broiler set 2 to 3 inches from heat) until most of sugar is melted and deep golden in places.
