EASY BRUSCHETTA SALAD
All of the flavors and textures you love about traditional bruschetta but loaded in a salad that is easy to make and totally delicious.

Steps:
- Preheat oven to broil. Place sliced baguette onto cookie sheet.
- While the oven is preheating, combine tomatoes, mozzarella and basil in a small bowl. Add balsamic vinaigrette. Set aside.
- Place bread slices into preheated oven under broiler for 2-5 minutes or until bread is lightly toasted. Remove from oven and immediately rub garlic clove over each slice of bread. Cut each slice of bread into 4-6 pieces. Put back into the oven for 1-2 minutes if you want your bread more toasted.
- To assemble the salad, add your salad greens to the bottom of the bowl. Add baguette croutons around the edge of the greens. Spoon the tomato mixture into the middle of the croutons and on top of the greens {there will be additional dressing left in the bowl you had your tomato mixture in. You can use it to dress the salad after it has been tossed if desired but sometimes what is on the tomato mixture is enough}.
- Toss salad, season with salt and pepper to taste and add additional dressing if desired. Serve immediately. Leftovers can be kept in the refrigerator but the baguette croutons will get soggy.

- Preheat oven to 400°. In large skillet, heat 2 tablespoons oil over medium-high heat; saute onion until softened. Reduce heat to medium-low; cook until golden brown, 25-30 minutes, stirring occasionally., Toss tomatoes with 1 tablespoon oil, 1/4 teaspoon salt and 1/8 teaspoon pepper; spread in a 15x10x1-in. pan. Roast until softened, 10-15 minutes. Stir tomatoes into onion, mashing lightly. In small bowl, mix cream cheese, blue cheese, garlic and the remaining salt and pepper., Brush bread slices with remaining oil; grill, covered, over medium heat until lightly toasted, 1-2 minutes per side. - To prepare salad dressing, combine ranch dressing and horseradish in a small bowl; cover and chill.
- To prepare steaks, combine black pepper, ground coffee, ground cumin, and ancho chile powder. Rub both sides of steaks with pepper mixture, and let stand 10 minutes.
- Heat a nonstick grill pan over medium heat. Coat steaks with cooking spray. Add steaks to pan; cook 3 minutes on each side or until desired degree of doneness. Remove steaks from pan; let stand 7 minutes.
- Combine shallots, fresh basil, bell peppers, juice, and tomatoes in a small bowl; toss well.
