6 tablespoons Hidden Valley® Original Ranch® Seasoning & Salad Dressing Mix Shaker
2 large eggs
1-1/2 cups water
1 teaspoon salt
2 broiler/fryer chickens (3-1/2 to 4 pounds each), cut up
Oil for deep-fat frying

Steps:

  • In a large shallow dish, combine 2-2/3 cups flour and Hidden Valley® Original Ranch® Seasoning & Salad Dressing Mix Shaker. In another shallow dish, beat eggs and 1-1/2 cups water; add 1 teaspoon salt and the remaining 1-1/3 cup flour and 1/2 teaspoon pepper. Dip chicken in egg mixture, then place in the flour mixture, a few pieces at a time. Turn to coat., In a deep-fat fryer, heat oil to 375°. Working in batches, fry chicken, several pieces at a time, until golden brown and a thermometer inserted into chicken reads 165°, 7-8 minutes on each side. Drain on paper towels.

Steps:

  • Grease a 13 x 9-inch baking dish.
  • Set oven to 350 degrees F.
  • In a shallow dish mix together the cornflake crumbs with Parmesan cheese, garlic powder (if using) black pepper and dry ranch dressing mix.
  • Place the melted butter in a shallow dish.
  • Coat the chicken breast or strips into the melted butter, then roll into the cornflake mixture.
  • Place in prepared baking dish.

1 envelope (1 oz) ranch dressing and seasoning mix (milk recipe)
2 eggs

  • Heat oven to 350°F. Line cookie sheet with foil.
  • Crush cereal; place in large bowl. Add cheese and dressing mix; mix well. In separate bowl, beat eggs with fork or whisk.

8 slice bacon, crispy fried and crumbled
3 Tbsp butter
2 large chicken breast halves, skinless and boneless (cut in half to have 4 pieces)
1/2 c all purpose flour
1/2 c milk
1 large egg
1 c panko bread crumbs
1/4 c parmesan cheese, grated
3 Tbsp all purpose flour
(1-oz) packet ranch salad dressing & seasoning mix
2 c milk, 2% ( you can use whole milk if you prefer)
1 c cup shredded cheddar cheese
salt and pepper to taste
1 (16-oz) package penne pasta, cooked to directions
sliced green onions for garnish if desired

Steps:

  • 1. Fry bacon in a large skillet over medium heat until crispy; drain on paper towels. Reserve 2 tablespoons of bacon grease for frying chicken. NOTE: save the rest for another recipe! I never discard good bacon grease.
  • 2. I use extra-large skinless chicken breast (from SAM's) that I slice in half. Pound the chicken between two sheets of plastic wrap to about 1-inch thickness; coat chicken for frying.
  • 3. Using three cake pans or bowls; add flour to one; season with salt and pepper. Add egg and milk to 2nd pan and then panko and parmesan to third pan; seasoned with salt.
  • 4. Coat both sides of chicken with flour, coat both sides in the milk/egg mixture and then coat in panko.
  • 5. Add butter to the reserved bacon drippings, and then add chicken to the same skillet. Cook until golden browned and done; remove from pan and set aside. Let chicken rest for 5 minutes before cutting/slicing it. This will help keep the chicken moist and from becoming too dry.
  • 6. Add 3 tablespoons flour and ranch dressing mix into pan. Add additional butter if needed. Stir in the milk, stirring occasionally, until thickened and bubbly. Stir in the cheddar cheese; cook and stir until the cheese is melted. Taste for seasoning and adjust as needed.
  • 7. Cook pasta according to package directions in boiling salted water; drain and return to pot. Stir in all but a little of the sauce and 1/2 of the bacon.
  • 8. Plate pasta, slice chicken to go on top; drizzle with remaining sauce and top with remaining bacon and sliced green onions if desired.
  • 9. Enjoy!

Oven-baked Parmesan Chicken
3 TBSP. Dijon mustard
1 TBSP. white wine vinegar
½ tsp. salt
½ tsp. freshly ground black pepper
1¼ lb. skinless, boneless chicken thighs or breasts (or chicken tenders)
1 cup Panko breadcrumbs
1 cup Parmesan cheese, finely grated
3 TBSP. butter, melted
Cool Ranch Dipping Sauce
⅓ cup buttermilk
⅔ cup light mayonnaise
1 med. clove of garlic, grated on a microplane (or similar grater)
½ tsp. Worcestershire sauce
½ tsp. freshly ground black pepper
1 TBSP. fresh dill, minced
2 TBSP. fresh chives, minced

Steps:

  • Preheat oven to 450°F. Line a baking sheet with parchment paper or heavy-duty foil and place a rack on it. Spray the rack lightly with oil.
  • Whisk together the mustard, vinegar, salt, and pepper in a large bowl until they are well blended. Cut the chicken into ⅔" thick pieces or strips (or use chicken tenders, which are already about the size you want for this recipe. If you prefer a larger serving size of chicken, you can also butterfly the chicken into two thinner cutlets.). Add the chicken to the bowl and coat well on all sides.
  • In a separate, shallow bowl, mix together the breadcrumbs, grated Parmesan, and a pinch of black pepper (optional). Mix well and then stir in the melted butter.
  • Dredge the chicken pieces in the breadcrumb mixture, gently pressing the breadcrumbs into the chicken pieces. Move the dredged chicken to the wire rack.
  • Place the baking sheet on the center rack of the oven and bake until the chicken is golden-crisp and cooked through, about 15 minutes. Do not overcook it.
  • To make the dipping sauce, combine all the ingredients for the cool Ranch sauce in a small bowl and refrigarate. (The sauce is best if made ahead of time).

1 lb boneless skinless chicken breast
2/3 cup all-purpose flour
1 teaspoon cayenne
3 eggs
1 tablespoon water

1 (1 ounce) package Hidden Valley Original Ranch Dips Mix
1 teaspoon lemon zest
1 teaspoon thyme

10 ounces frozen spinach
8 ounces chive & onion cream cheese, softened to room temperature
1 cup Hidden Valley® Original Ranch® Dressing
4 ounces water chestnuts, chopped
1 small shallots, chopped or 1/3 cup shallot
3 tablespoons fresh chives, chopped
1 teaspoon black pepper

Steps:

  • Make the Ranch Spinach Dip first to give the flavors a chance to marry and chill.
  • Cook the spinach as package directs, then put in a drainer and squeeze out all the moisture, then wrap a clean towel around and squeeze out the excess moisture, set aside.
  • Next chop the shallots you want about 1/3 a cup here.
  • Chop the fresh chives.
  • Chop the water chestnuts, or buy them that way.
  • Put the cream cheese in a medium bowl and add the ranch dressing, whip with a electric mixer to combine.
  • Then add the water chestnuts, spinach, shallot, chives and pepper.
  • Mix well, cover and chill at least 1 hour.
  • Pre heat your fryer to 375°.
  • Meanwhile, put the flour and cayenne in one shallow plate.
  • Put the eggs and water in a second plate and whip to combine.
  • In a third shallow plate (I use a pie plate) Combine the bread crumbs, parmeaean cheese, pepper, ranch dip mix, lemon zest, thyme and oregano.
  • Cut the chicken breasts into strips 1 inch wide and about 3 to 4 inches long.
  • Put chicken in a plastic bag and pound out to flatten a little.
  • This will make them cook faster and more evenly.
  • Dredge the chicken first in the flour, then dip in the egg wash, and roll in the seasoned bread crumbs.
  • Drop small amounts into the hot fat and fry about 4 to 5 minutes or until golden and crispy internal temp is 150 °and juices run clear.
  • Serve hot with the Ranch Spinach Dipping Sauce.

1 cup Panko (Japanese-style breadcrumbs)
4 teaspoons vegetable oil
Coarse salt and pepper
1/2 cup low-fat plain Greek yogurt
1 teaspoon roughly chopped fresh thyme leaves
1 clove garlic, minced
Cayenne pepper
2 boneless, skinless chicken breasts (1 pound)
Salad greens, for serving

Steps:

  • Preheat oven to 500 degrees. On a rimmed baking sheet, stir together panko and oil. Spread in an even layer, and bake until golden, about 3 minutes. Transfer to a plate, wipe sheet, and fit with a wire rack.
  • On a separate plate, combine yogurt, thyme, garlic, pinch of cayenne, 1 teaspoon salt, and 1/4 teaspoon pepper. Coat chicken with yogurt mixture then coat with breadcrumbs, pressing lightly to adhere. Shake off excess and place on rack. Bacon and Creamy Ranch Chicken Burgers with Crispy Scallion

1 package ground chicken breast
2 garlic cloves, finely chopped
1/2 small onion, grated
1/4 cup fresh flat-leaf parsley, a generous handful, chopped
1/4 pound dill havarti cheese, cut into 1/4-inch dice (see Note)
2 teaspoons poultry seasoning, 2/3 palmful
2 lemons
Salt and black pepper
Vegetable oil, for frying and for drizzling
2 cups buttermilk
1 teaspoon paprika, 1/3 palmful
All-purpose flour, for dredging
16 to 18 scallions, trimmed of roots
4 sandwich-size English muffins, split
Creamy Ranch dressing, for slathering toasted muffins
1 beefsteak tomato, cut into 8 slices

Steps:

  • Cook the bacon in a large nonstick skillet over medium-high heat until it is crisp.
  • While the bacon cooks, in a large bowl combine the ground chicken, garlic, onion, parsley, dill havarti chunks, poultry seasoning, the zest and juice of 1/2 lemon, salt, and pepper. Divide the mixture into 4 equal mounds, then form the meat into large, thin patties, about 1 inch thick. Drizzle them with vegetable oil to coat.
  • Remove the crispy bacon from the skillet to a paper-towel-lined plate and reserve. Wipe the excess grease from the skillet and return it to the cooktop over medium-high heat, add the burgers to the skillet, and cook them for 5 to 6 minutes on each side, or until they are cooked through.
  • While the burgers are cooking, put together the scallion "sticks." Heat 1 1/2 inches of the vegetable oil in a deep-sided skillet over medium heat. In a wide mixing bowl, combine the buttermilk, paprika, and the zest of the remaining 1 1/2 lemons. Place the flour in a second wide mixing bowl. Before you go at it, take one of the scallions and hold it up next to the skillet containing the heating oil. If needed, trim off some of the green tops to allow it to fit in the skillet easily.
  • Line a plate with a few paper towels and set it near the stovetop. Add a 1-inch cube of bread to the hot oil. If it turns deep golden brown in color after a count of 40, the oil is ready. If the bread cube browns too quickly, turn down the heat and wait a few minutes for it to cool.
  • Working in 2 to 3 batches, dip some of the scallions in the buttermilk, then into the flour, coating thoroughly. Put them back into the buttermilk and then into the flour again. Fry the coated scallions into the hot oil for about 1 minute on each side, or until golden brown. Transfer to the paper-towel-lined plate and immediately season them with a little salt. Repeat the process until all the scallion "sticks" are fried up.
  • Toast the English muffins and slather both sides with the Ranch dressing. Arrange the cooked Ranch burgers on the English muffin bottoms, top each burger with 2 slices of the crispy bacon and 2 slices of tomato, and finish them with the English muffin tops. Serve them alongside the crispy scallion "sticks."

3 radishes
3 Persian cucumbers, or any small cucumber
3 medium tricolor carrots
Kosher salt and freshly cracked black pepper
1 lemon
1 shallot, minced
1/4 cup olive oil
Two 5- to 6-ounce boneless, skinless chicken breasts
1/2 cup all-purpose flour
1 packet ranch seasoning
2 large eggs
1 1/2 cups panko breadcrumbs
1/3 cup canola oil
1 bunch dill
1 bunch parsley

Steps:

  • Thinly slice the radishes, cucumbers and carrots lengthwise using a mandoline or a very sharp knife. Place in a large bowl, sprinkle with salt and pepper and set aside.
  • Zest and juice the lemon. Combine the zest, juice and shallot in a mason jar or other jar with a tightly fitting lid and add salt and pepper to taste. Give it a good mix, then add the olive oil. Screw on the lid and shake to combine. Set aside.
  • Pat the chicken breasts dry. Using a sharp knife, slice each chicken breast in two horizontally so you have a total of 4 thin cutlets.
  • Now it's time to make your dredging station. Get out three pie pans, shallow bowls or plates with deep sides. Place the flour and ranch seasoning in one pie plate and whisk to combine. Crack the eggs in the second bowl, add 2 tablespoons of water and whisk to combine. Place the panko in the final pie pan.
  • Line a baking sheet with parchment paper. Working in an assembly line, place a chicken cutlet in the flour mixture and turn to coat both sides; tap off any excess. Place the cutlet in the egg wash and coat both sides. Finally, coat in breadcrumbs and place on the baking sheet. Repeat with the remaining cutlets.
  • Heat the canola oil in a large skillet over medium heat. Once the oil is shiny, add the chicken cutlets and cook until golden and cooked through, about 3 minutes per side. Place on a cooling rack to drain off any excess oil and keep the cutlets nice and crispy.
  • Drain off any excess water from the veggies and pat them dry with a paper towel. Add 1 cup
  • fresh parsley leaves and 1/2 cup dill leaves. Drizzle in the lemon dressing and toss to combine.
  • Congrats, it's time to plate! Place each cutlet on a plate, top with veggies and enjoy!

1/2 cup milk
1 (1 ounce) envelope ranch dressing mix, I use Hidden Valley
1 lb boneless skinless chicken breast half, about 4
1 1/2 cups tortilla chips, finely crushed
1 -2 tablespoon margarine or 1 -2 tablespoon butter, melted

Steps:

  • In a shallow dish mix soup, milk and dressing mix.
  • Reserve 1 c for sauce.
  • Dip chicken into soup mixture ( I let marinate over night, but not necessary).
  • Coat with tortilla chips.

8 skinless, boneless chicken breast halves
2 (1 ounce) packages ranch dressing mix
¼ cup dry bread crumbs

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Combine dressing mix and bread crumbs in a plastic bag. Add chicken and shake until coated.
  • Place coated chicken pieces on an ungreased cookie sheet and bake in preheated oven for 25 to 30 minutes, or until chicken is cooked through and juices run clear. Serve with rice or potatoes, if desired.

2 c crispy rice cereal
1/2 c grated parmesan cheese
1 envelope(1 oz) ranch salad dressing mix
2 egg whites,beaten
8 skinless,boneless chicken thighs(about 5 oz each)

Steps:

  • 1. Preheat oven to 350 degrees.Spray a large baking sheet with nonstick cooking spray.Combine the rice cereal,Parmesan cheese and ranch dressing mix in a large bowl.
  • 2. Place beaten egg whites in a medium bowl.Dip each chicken thigh in the egg whites and then in the cereal mixture to coat evenly.
  • 3. Arrange the coated chicken on the prepared baking sheet. Bake until golden and juices run clear when chicken is pierced with a knife,20-25 minutes.Serve hot
  • 4. **** Recipe does say chicken thighs,but of course you can do any ,and all chicken pieces the same way.I only eat the white meat and this recipe was really good on mine..
