1 package (8-1/2 ounces) cornbread/muffin mix
1 pound ground beef
2 cans (14-1/2 ounces each) diced tomatoes, drained
2 cups frozen mixed vegetables, thawed
1 can (6 ounces) tomato paste
1 to 2 teaspoons Cajun seasoning
1 cup shredded cheddar cheese
2 green onions, thinly sliced

Steps:

  • Preheat oven to 350°. Prepare cornbread batter according to package directions. Spread into a greased 11x7-in. baking dish., In a large skillet, cook beef over medium heat until no longer pink; drain. Add tomatoes, vegetables, tomato paste and seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes. Pour over batter. Sprinkle with cheese., Bake, uncovered, until golden brown, 25-30 minutes. Sprinkle with onions., Freeze option: Omit onion topping. Cool baked casserole; wrap and freeze. To use, partially thaw in refrigerator overnight. Remove 30 minutes before baking. Preheat oven to 350°; bake as directed, increasing time as necessary for a thermometer inserted in center to read 165°. Sprinkle cooked casserole with onions.

1 medium eggplant, peeled and cut into 1/2-inch cubes
3 tablespoons olive oil
2 celery ribs, diced
1 medium onion, diced

3 plum tomatoes, diced

1/2 teaspoon pepper
12 ounces uncooked shell-on shrimp (31-40 per pound), peeled and deveined

Steps:

  • Place eggplant in a large saucepan; add water to cover. Bring to a boil. Reduce heat; simmer, covered, until tender, 3-4 minutes. Drain., Preheat oven to 350°. In an ovenproof skillet, heat oil over medium-high heat. Add celery, onion and green pepper; saute until tender, about 5 minutes. Reduce heat to medium; stir in tomatoes and eggplant. Saute 5 minutes. Stir in seasonings. Add shrimp and bread crumbs; saute 5 minutes longer, stirring well., Bake 30 minutes. Remove skillet from oven; top with cheese. Bake 5 minutes more.

2 chicken breasts, cut into bite-sized pieces
1 small onion, diced
1 celery rib, diced
1 large green pepper, seeded and diced

1 (14 1/2 ounce) can chicken broth
1 3/4 teaspoons creole seasoning

1/2-3/4 lb smoked sausage, cut into 1/4 inch slices
1 small onion, chopped

1 (14 1/2 ounce) can diced tomatoes with basil oregano and garlic
1 (14 ounce) can fat-free chicken broth
1 3/4-2 teaspoons cajun seasoning (I use Tony Chachere's)

  • In a large non-stick skillet, saute smoked sausage over medium-high heat for 3-4 minutes or until browned.

This is the way I did every morning I came into work with a hangover during Mardi Gras. I'd get to work early and have the chef whip me up one of these and I was ready to take on the 12 hour shift ahead of me. REALLY delicious!

2 teaspoons butter
2 teaspoons peanut oil
3 eggs
1 tablespoon water, lukewarm
creole seasoning, to taste
2 ounces ham, chopped into small cubes
2 ounces smoked sausage, chopped into small cubes
2 tablespoons onions, chopped
2 tablespoons green bell peppers, chopped
1/4 teaspoon garlic, minced
2 ounces provolone cheese
fresh parsley, chopped
louisiana hot sauce, to taste
1/2 cup creole tomato sauce (The Royal Orleans Rib Room Creole Sauce) (optional)

Steps:

  • In a small frying pan add your sausage, ham, onions, and bell peppers. Saute for about 3-4 minutes. You shouldn't need any butter or oil due to the fat content in your sausage. Once onions and bell peppers just start to soften add your garlic, take off heat and set aside.
  • Heat butter and peanut oil in omelette pan on high.
  • Whisk the eggs and water together until fluffy and combined.
  • Once butter has completely melted into oil swirl butter and oil around to coat entire pan. Add your eggs to hot pan.
  • Turn temp to Med-High and let cook about 1 minute or until edges begin to look cooked. Carefully push cooked edges towards the middle using a spatula. You want to allow the uncooked eggs to move to the edge and coat the bottom of the pan. Shake a little and make sure eggs are not sticking (they shouldn't because there should be plenty of "lube" with the butter and oil). Turn heat to Med.
  • Once eggs look mainly cooked with very little rawness on the top you'll want to sprinkle lightly with creole seaoning, add your ham, sausage, onions, bell pepper, garlic and cheese. Flip half omelette over and onto itself and allow to cook for about 2 minutes or until cheese is fully melted.
  • Garnish with fresh parsley and serve with a bottle of louisiana hot sauce on the side.
  • I usually make these one at a time, even when I'm entertaining. If you really want to add some pow then I suggest serving with creole sauce over the top. But really good with or without it.
  • If serving a large group you can 5X the recipe and combine ingredients and pour into a 8x 12x glass baking dish and bake for 40 minutes at 350°F Be sure to place a small oven safe bowl filled with water inside of the oven with the dish while baking. Let sit for at least 10 minutes before serving. Should withstand the toothpick check by poking middle with toothpick and coming out clean by the 40 minutes. If not clean then let bake another 5-10 minutes or until done in middle.

7 medium mirliton (also called chayotes; 5 lb)
2 medium onions, chopped
2 green bell peppers, chopped
1 stick unsalted butter
3 large garlic cloves, minced
24 saltines, finely ground (3/4 cup)
2 lb large shrimp, shelled, deveined, and cut into 1/2-inch pieces
1/4 teaspoon cayenne, or to taste
2 tablespoons fine dry bread crumbs

Steps:

  • Simmer mirlitons in water to cover by 2 inches in an 8-quart pot, partially covered, until very tender, about 1 hour. Drain mirlitons, then halve and peel, discarding pits. Coarsely chop in a food processor.
  • Preheat oven to 400°F.
  • Cook onions and bell peppers in 6 tablespoons butter in a 6- to 7-quart wide heavy pot over moderately low heat, stirring occasionally, until softened. Add garlic and cook, stirring, 1 minute. Add mirlitons and cook, stirring occasionally, until most of liquid is evaporated, about 5 minutes. (Do not let vegetables brown.) Stir in cracker crumbs, shrimp, cayenne, and salt and pepper to taste and cook, stirring, 1 minute. Spoon into a shallow 3-quart baking dish and sprinkle with bread crumbs. Dot with remaining 2 tablespoons butter and bake in upper third of oven until crumbs are just golden, 12 to 15 minutes.

2 cups sliced fresh okra
1 can (10 3/4 oz) condensed cream of shrimp soup
1/2 cup dry white wine
1/2 teaspoon freshly ground black pepper
1/4 to 1/2 teaspoon ground red pepper (cayenne)
3 cups cooked long-grain rice
Chopped fresh parsley, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray.
  • In nonstick 4-quart Dutch oven, cook sausage over medium-high heat 6 minutes, stirring frequently, until browned. Add shrimp; cook 3 minutes, stirring frequently, until shrimp are pink. Remove sausage and shrimp to bowl; set aside.
  • In Dutch oven, heat oil over medium heat. Add thawed vegetables, garlic and okra; cook 3 to 5 minutes, stirring constantly, until okra begins to soften. Reduce heat to low. Stir in soup, wine, black pepper, red pepper and rice. Stir in sausage mixture. Spoon into baking dish.

I had some leftover Easter ham and had some frozen broccoli in the freezer, so I based this recipe on Chef Lorac's Recipe #39087 (please try this when you get a chance its great). Be careful with this, it starts out as wonderfully mild sauce, but it sneaks up on you with the heat (at least it does for me :) Submitted on April 19th 2006.

1 1/2 cups frozen chopped broccoli

1/4 teaspoon salt
1/4 teaspoon dried basil

  • In a large pot of water, add broccoli and pasta; cook until pasta is at desired doneness.
  • Drain and keep warm.

1 tablespoon canola oil
1/2 lb Canadian bacon, diced
1 1/2 lbs skinless chicken breasts, cut into bite size chucks
1 large onion, chopped
3 garlic cloves, minced
2 large green bell peppers, seeded and chopped
1 cup chopped celery
6 large tomatoes, chopped
15 ounces no-salt-added tomato sauce
2 bay leaves, crumbled
1 teaspoon dry thyme leaves
2 teaspoons white pepper
1/4-1 teaspoon cayenne pepper (how hot you want it??)
1/2 cup chopped parsley
1 1/2 cups long-grain rice (I use jasmine)
3 cups low sodium chicken broth

Steps:

  • Heat oil in a 12 to 14 inch frying pan over medium heat. Add your Canadian bacon and chicken, cook stirring often until browned on all sides, this takes about 6 minutes Then transfer the meat using a slotted spoon into a casserole pan (4-5 quart).
  • Next add onion, garlic, bell peppers, and celery to hot frying pan, cook until onions are soft (about 10 minutes). Add tomatoes, tomato sauce, bay leaves, thyme, white pepper, cayenne, and parsley; cook, stirring occasionally, until sauce boils. Boil gently, uncovered for 5 minutes.
  • Finally pour sauce over meats, stir in rice and broth. Cover and bake at 375°F oven until rice is tender to bite (about 45 minutes).
