OLD FASHIONED SPICY OATMEAL RAISIN BARS

Tasty and good for an energy boost. Goes nicely with a glass of milk. These soft, moist bars are a great snack and kids love 'em.

Number Of Ingredients 16

1 cup raisins (chopped will make the bars easier to cut) or 1 cup dates, whole or chopped (chopped will make the bars easier to cut)
3/4 cup water
1 cup quick-cooking rolled oats
1 cup flour
1/3 cup shortening (or unsalted butter, softened)
1/2 cup sugar
1 egg
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon vanilla
3/4 teaspoon baking soda (1/2 tsp at high altitude)
1/3 teaspoon nutmeg
1/4 teaspoon ground cloves
1/2 cup nuts, chopped
1/2 cup whole wheat flour or 1/2 cup all-purpose flour
1/8 teaspoon ginger

Steps:

  • Combine raisins with water, and simmer for 10 minutes.
  • Add oats and all other remaining ingredients; blend, then beat at medium speed for 1 minute.
  • Spread evenly in greased 13x9" pan, and bake at 350F (375 at high altitude) until top springs back when touched lightly in the center (15-20 minutes).

1/3 cup raisins
1 pinch salt
1 teaspoon vanilla
1/2 teaspoon ground cinnamon

Steps:

  • Cook oats as directed on box, but mix the raisins and salt into the oats.
  • Remove from heat on stove or from microwave and add vanilla, cinnamon and nutmeg.
  • Sprinkle each bowl with brown sugar.

1/2 cup butter, softened
1/2 cup butter flavor shortening
1 cup light brown sugar, packed
1/2 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
3 cups rolled oats
1 cup raisins

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, cream together the butter, butter flavored shortening, brown sugar, white sugar, eggs and vanilla until smooth.
  • Combine the flour, baking soda, cinnamon, cloves, and salt; stir into the sugar mixture.
  • Stir in the oats and raisins.
  • Drop by rounded teaspoonfuls onto ungreased cookie sheets.
  • Bake 10 to 12 minutes until light and golden.
  • Do not overbake.

Sure, you could just buy flavored instant oatmeal at the supermarket. But DIY-ing is just as easy and makes for twice-as-tasty results packed with tons of crunchy, salty and sweet goodies, including nuts and seeds galore, raisins, warm spices and a bit of maple sugar. If you can't find maple sugar, it's okay to swap in equal parts light brown sugar.

4 cups quick-cooking oats
1 cup roasted salted pepitas
1 cup raisins
1 cup raw walnuts, chopped
1/2 cup unsalted roasted sunflower seeds
1/2 cup maple sugar
1 tablespoon ground cinnamon
1 tablespoon sea salt
1/2 teaspoon ground cardamom
Fresh berries, for serving

Steps:

  • Combine the oats, pepitas, raisins, walnuts, sunflower seeds, maple sugar, cinnamon, salt and cardamom in an airtight container. Store at room temperature for up to 3 months.
  • To serve, stir to make sure all the ingredients are evenly distributed (some tend to fall to the bottom). Combine 1/2 cup instant oatmeal mix with 1 cup water or milk in a medium microwave-safe bowl. Microwave on high until the mixture is bubbling and much of the liquid is absorbed, about 3 minutes.
