RAISIN-CAPER SALSA VERDE

1 cup golden raisins, roughly chopped
1/2 cup washed, salted button capers (regular capers fine if button not available), roughly chopped
1/2 cup roughly chopped flat-leaf parsley
1/2 cup finely chopped shallots
1 lemon, juiced, plus a pinch grated rind
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil

Steps:

  • Rehydrate raisins by pouring boiling water over them and leave for 1 hour to rehydrate. Drain the raisins and add to the capers and parsley. Combine all ingredients in a large mixing bowl and toss to combine. Serve with grilled lamb.

1/2 cup raisins
2 large crisp, Granny Smith apples
1 to 2 tablespoons lemon juice
1 small mild onion or 4 green onions, finely chopped
Leaves from 1 large bunch fresh mint
1 tablespoon clear honey

Steps:

  • Place raisins in small bowl, cover with boiling water, and leave for 5 minutes to plump. Drain well on paper towels. Peel apples, If desired, re move cores and chop. In medium bowl, toss apples, lemon juice, and onion or green onions together. Reserve a few mint leaves for garnish. Chop remaining mint very finely. Stir into apple mixture with raisins, honey, and stir well. Spoon into serving bowl and garnish with reserved mint leaves.

Ingredients
1/2 cup extra-virgin olive oil, plus more for grilling
1/4 cup red wine vinegar
4 garlic cloves, chopped
2 tablespoons chopped fresh oregano
1 tablespoon chopped fresh thyme leaves
1 lemon, juiced
1 tablespoon Dijon mustard
Kosher salt and freshly ground black pepper
1 (3 1/2-pound) boneless leg of lamb, butterflied but not tied
Salsa:
Ingredients
1 cup golden raisins, roughly chopped
1/2 cup washed, salted button capers (regular capers fine if button not available), roughly chopped

1/2 cup finely chopped shallots
1 lemon, juiced, plus a pinch grated rind

Steps:

  • For lamb: To make the vinaigrette, in a blender, add the oil, vinegar, garlic, oregano, thyme, lemon juice, and Dijon mustard, season with salt and pepper, to taste. Blend until thoroughly combined. Pat the lamb dry and put it on a shallow platter. Season all over with salt and pepper. Pour half of the vinaigrette over the lamb, turning the meat to get it well coated. Marinate in the refrigerator for 2 hours. Remove the marinated meat from the refrigerator about 30 minutes before grilling. Heat the grill (or large cast iron skillet) and oil it lightly. Remove the lamb from the marinade and grill for about 15 to 20 minutes per side for medium-rare. (Adjust the time accordingly for other degrees of doneness.) Transfer to a cutting board and let rest for 10 minutes. For the salsa: Rehydrate raisins by pouring boiling water over them and leave for 1 hour to rehydrate. Drain the raisins and add to the capers and parsley. Combine all ingredients in a large mixing bowl and toss to combine. Serve with grilled lamb.

This recipe, minus a little tweaking, came from the Gooseberry Patch 'family favorite recipes' cookbooklet, 2005, that I received in a cookbook swap recently! The original recipe called for 1/2 cup of seeded & minced jalapeno pepper, but that was way too much for me, so . . . Preparation time does not include time needed to chill!

1/2 cup yellow bell pepper, diced small
1/2 cup green bell pepper, diced small
1 cup dark raisin
1 cup pineapple, diced small
1/2 cup red onion, diced small
1/2 cup jicama, diced small
1/4 cup fresh cilantro, fresh, finely chopped
1/2 cup green chili, finely chopped
2 tablespoons lime juice, fresh
1 garlic clove, minced
1/2 teaspoon chili powder
1/8 teaspoon cumin

  • Combine all ingredients in a medium bowl.
  • Cover & refrigerate at least 1 hour for flavors to blend.
  • Serve with chips, as a dip or spread onto halved or quartered toasted bread.
