RACHEL'S PBR POTATO BREAD (BREAD MACHINE/ABM)
This yields a nice big loaf of bread that's good and hearty...and while I guess any kind of beer works, PBR is what makes it magic! PBR but REAL potatoes, no box flakes ;) A little time-consuming but soooo worth it. I love it fresh out of the oven but it also tastes great after it's softened up and used for sandwich bread. And the recipe is all my doing!! :D Makes one large 2-lb loaf. Prep time is based on my dough cycle (90 min.) plus time to boil the potatoes. EDIT: I forgot to include the vital wheat gluten in the original post and upped the flour after the first batch came out runny.

Steps:
- Wash and peel the potatoes, and boil them in unsalted water for about 15-20 minutes or until tender and squishy.
- Mash 'em up real good with a fork or potato masher.
- Put all of the ingredients into your bread machine in the order shown, or in the order recommended by the manufacturer, and do a dough cycle.
- If you want a soft bread that's made in the machine, pick a Medium or Light cycle.
- If you just did a dough cycle, dough should be a thick ball that's easily molded. If not, dust your hands with some flour and knead it until it's malleable. Mold it into the shape of a loaf.
- Place some parchment paper onto a cookie sheet. Lay the loaf onto it, and bake at 375F for 25-30 minutes or until golden brown on top.
- This bread is total heaven fresh out of the oven with some butter and a PBR tallboy!
POTATO BREAD-BREAD MACHINE
Yes, I know that there are already recipes for potato bread on Zaar, but couldn't find one like this one! This is a good crusty loaf with a soft centre making it perfect for sandwiches. We don't buy any bread, so I rely heavily on good bread recipes-this one we like a lot! Tip: if you are using leftover mashed potato that has had milk and or butter added, you may need to reduce the liquid a little.

- Pour the water and oil into the bread pan. If your instructions specify that the yeast is to placed into the pan first, reverse the order in which you add the liquid and dry ingredients.
- Sprinkle over the flour, ensuring that it covers the water. Add the mashed potato and milk powder. Add the salt and sugar in separate corners of the bread pan. Make a small indent into the centre of the flour and add the yeast.
- Set the machine to basic and medium crust and start.
- To glaze the loaf, brush the top with milk either at the beginning of cooking time or halfway through.

MY GRANDMA'S POTATO ROLLS OR POTATO BREAD (FOR BREAD MACHINE)
This is my Grandma's recipe and it is DELISH! I am not sure where she got it from, but these rolls have been a tradition in our family for as long as I can remember. This recipe uses REAL mashed potatoes (not instant flakes). So, when you plan to make this be sure to reserve 1/2 to 1 c. of the mashed potatoes you served at dinner the night before!! Today I was hungry for these rolls but didn't feel like rolling out dough, so I attempted to make the recipe (cut in half) in my bread machine to make a loaf of bread instead....PERFECT results! I have listed the ingredients the way my bread machine lists them, but do be sure to check manufacturer's instructions on the correct order of ingredients for your specific machine. I hope everyone enjoys this as much as our family does. Below are both the rolls and the bread machine versions of this recipe.

Steps:
- If making POTATO ROLLS: Preheat oven to 350°F.
- In a large mixing bowl, dissolve yeast in 1 cup warm water. Allow the yeast to activate and then mix in sugar or honey.
- Add mashed potatoes, vegetable oil, eggs and salt. Use mixer or bread hooks.
- Add flour one cup at a time stopping at 5 1/2 cups. Slowly add remaining flour until the dough is only slightly sticky to the touch. The dough should be workable but not dry.
- Place in a greased bowl and cover with a towel. Allow to rise in a warm place until doubled in size, or it can sit overnight at room temperature.
- Punch down and then roll dough out on floured surface to 1/2" thickness.
- Use a canning jar ring to cut rolls - should make 30-36 rolls.
- Place on a greased pan and allow to rise till almost doubled.
- Bake in a preheated 350°F oven 12-15 minutes or until lightly browned.
- If desired, slather outside tops with butter while still warm.
- Enjoy!
- NOTE: Prep time does not include rise times as they will vary.
- If making POTATO BREAD: Place into bread pan in order as listed above OR as per manufacturer's guidelines.
- Set for 1 1/2 lb. bread loaf and start bread machine.
- Walk away until you hear the "ding" of the bread machine - approximately 3 hours later.
- Remove from pan and slather outside of the loaf with butter while still warm from machine.
- Enjoy!
POTATO BREAD (BREAD MACHINE)
This is a light and delicious loaf of bread made with instant mashed potato flakes. It was my first truly successful attempt at using my new bread machine, and I plan on making it again and again! If I didn't screw it up it must be foolproof! I found this online somewhere, but I'm ashamed to say I forgot where. This makes one 1 1/2 pound loaf.

- Place all the ingredients in the pan according to the order in the manufacturer's instructions.
- Set crust on medium and program for the Basic cycle; press Start.
- The dough ball will be nicely formed and slightly sticky but stiff at the same time when tested.
- It should feel a bit sticky, so take care not to add any more than an extra tablespoon of flour.
- The potato flakes will soak up the extra moisture during the rises and will become smooth during the risings.
- When the baking cycle ends, immediately remove the bread from the pan and place it on a rack.
- Let cool to room temperature before slicing.
