OLIVE OIL POACHED TUNA MELTS



Olive Oil Poached Tuna Melts image

3 cups olive oil
4 to 5 stems fresh thyme
1 lemon
2 large bay leaves
2 large cloves garlic
1 1/2 pounds tuna, such as ahi or yellowtail, 1 inch-thick2 ribs celery, finely chopped or 1/2 small bulb fennel, finely chopped
1/2 red onion, chopped
1 small fresh chile pepper, finely chopped
1/2 small sweet pepper, finely chopped
1/4 cup Nicoise or other pitted black olives
1/4 cup fresh flat-leaf parsley leaves, chopped
2 to 3 tablespoons capers
2 to 3 tablespoons fresh tarragon, finely chopped
Seafood seasoning, such as Old Bay Seasoning
6 ounces very sharp white Cheddar or Gruyere cheese
Brioche rolls or lobster rolls, split

Steps:

  • Place the oil, thyme, rind of the lemon peeled into strips, bay leaves and crushed garlic in a pan and bring to a gentle boil over medium-high heat. Then remove the pan from the heat and add the trimmed fish. Let stand 20 minutes. Then remove the fish, reserving the poaching oil, cool and flake.
  • In a bowl, combine the juice of the lemon with 1/3 cup reserved poaching oil. Whisk to combine and season with salt and pepper. To the dressing, add the celery, onions, hot and sweet peppers, olives, parsley, capers and tarragon. Season the fish with a little seafood seasoning and add to the salad. Combine with the tines of a large fork, cover and store.
  • To serve, place the rack in the center of the oven and preheat the broiler.
  • Shred the Cheddar or Gruyere cheese on the large side of a box grater.
  • Pile the tuna salad on the bottom of the rolls. Top with the cheese. Place both the bottoms and tops under the broiler to toast and melt the cheese, 2 minutes. Serve hot.

Rach uses canned tuna (pantry staple alert!) and homemade guacamole to make her easy open-faced Mexican-style tuna melts.

¼ cup finely chopped or grated red onion
1 small jalapeño pepper
seeded and finely chopped
1 clove garlic
finely grated or pasted
One small handful cilantro leaves
chopped (optional)
A few dashes hot sauce
optional
1 lime
juiced
Salt
1 ripe Haas avocado
halved and pitted
One-half 6-ounce can line/pole-caught sustainable tuna
drained and flaked
1 large English muffin
split and lightly toasted
2 slices ripe tomato
4 slices cheese (Rach likes Colby cheddar and Pepper Jack
combined)
Pickled jalapeño slices
for topping

Steps:

  • Preheat broiler with rack in center
  • In a bowl, combine red onion, jalapeño pepper, garlic, and, if using, cilantro and hot sauce
  • Add lime juice and salt, let stand a few minutes, then combine with avocado and mash it up with a fork
  • Fold in tuna and pile evenly onto the halved and toasted English muffins
  • Top the tuna salad with sliced tomatoes and cover the tomatoes with the cheese, then broil to melt cheese
  • Top with pickled jalapeños

TUNA MELT MAC 'N' CHEESE

1 pound hollow cavatappi or elbows with lines, or macaroni with lines
About 3 tablespoons EVOO, plus extra for drizzling
12 ounces line-caught canned tuna, drained
1/2 cup finely chopped fresh herbs, such as dill, parsley and tarragon
1/2 cup finely chopped red onion or scallions, whites and greens
2 tablespoons Dijon mustard
1 to 2 small ribs celery, finely chopped
1 lemon, juiced
Freshly ground black pepper
1 stick butter
3 tablespoons flour
About 2 1/2 cups whole milk
2 cups grated white Cheddar or gruyere cheese
1 1/2 cups homemade breadcrumbs or panko
1/2 cup grated Parm

Steps:

  • Bring a large pot of water to boil for the pasta. Salt the water and cook the pasta to less than al dente, 5 to 6 minutes. Drain and drizzle with a touch of oil to keep the pasta loose.
  • In a large bowl, flake the tuna and add the herbs (reserving a tablespoon or 2 for breadcrumbs), onions, mustard, celery, lemon juice, EVOO and some salt and pepper. Add the pasta and combine well. Transfer to a baking dish or large casserole dish.
  • In a medium saucepot, melt 4 tablespoons of butter. Whisk in the flour and cook 1 minute. Then whisk in the milk and season with salt and pepper, thicken to coat the back of a spoon. Stir in the Cheddar in a figure-eight motion. Pour the sauce evenly over the pasta and tuna. Gently combine with a spoon to settle the sauce. Cool and store for a make-ahead meal.
  • Melt the remaining 4 tablespoons of butter in a small pan and add the breadcrumbs and reserved herbs, toss to evenly distribute the butter, remove from heat and transfer to airtight container.
  • To prepare, preheat the oven to 400 degrees F and bring the casserole to room temperature. Top the casserole with breadcrumbs and Parm cheese. Bake until golden and hot through.

1 teaspoon anchovy paste
1/4 cup extra-virgin olive oil
1/4 cup pitted chopped black olives, oil cured or kalamata
1/2 small red onion, minced
2 ribs celery, minced
12 ounces canned or jarred tuna, drained and flaked
1 lemon, juiced
Freshly ground black pepper
2 tablespoons softened butter
4 top-split New England hot dog rolls
8 ounces fontina cheese, thinly sliced or shredded

Steps:

  • Preheat the broiler.
  • In a large bowl, combine the anchovy paste with extra-virgin olive oil. Add the olives, onions, celery, tuna, lemon juice and pepper, to taste, and toss to combine. Lightly butter each side of the rolls, and toast on each side under the broiler. Fill the rolls with the tuna salad and top with cheese. Arrange on a sheet pan and broil until the cheese melts. Transfer to serving plates and serve.

1 large sprig rosemary, leaves stripped and finely chopped

4 slices provolone cheese, deli sliced
16 rounds sliced sesame baguette

  • Mash tuna with finely chopped shallot, rosemary and black pepper. Quarter the sliced cheese. Build mini sammies of bread, cheese, tuna, cheese, bread. Melt butter in skillet over medium heat. Grill sandwiches on both sides until golden. Remove from skillet and serve.;

I saw her make this on her show one day and just had to try it out. I slightly modified it, due to a couple of items not available at our supermarket. Not your average tuna sandwich.

2 (5 5/8 ounce) cans good quality tuna, drained
1 (14 ounce) can water-packed artichoke hearts, drained and chopped
1/4 cup sun-dried tomato, thinly sliced
1/4 cup black olives, sliced
3 tablespoons capers, rinsed
1/4 cup flat leaf parsley, finely chopped
2 large shallots or 1 small red onion, finely chopped
1 cup baby arugula
1 large lemon
olive oil, for liberal drizzling
pepper
1/2 lb deli-sliced provolone cheese
1 loaf ciabatta, split lengthwise horizontally

Steps:

  • Heat panini press or cast iron skillet for pressing sammy.
  • If using a skillet, you will need another heavy skillet to press with or a brick, wrapped in foil.
  • Flake tuna in bowl. Add chopped artichokes, sun-dried tomatoes, olives, capers, parsley, shallots and arugula.
  • Dress with lemon juice and liberal drizzle of oil.
  • Mix to combine salad thoroughly, season with pepper to taste.
  • Arrange half of the cheese, overlapping the slices, on the bottom half of ciabatta.
  • Top with salad in even layer then arrange remaining cheese and top with bread.
  • Cut the loaf into 4 sections and press a few minutes to melt cheese and heat through.

1 tablespoon extra virgin olive oil
1 large onion, finely chopped
6 ounces mushrooms, chopped
4 (5 ounce) cans tuna, drained
2 tablespoons mayonnaise
6 ounces cheddar cheese, shredded (about 1 1/2 cups)
3/4 cup milk
3 eggs, lightly beaten
1/4 cup flour
2 tablespoons butter, melted

Steps:

  • 1. Preheat the oven to 450 degrees. In a large skillet, heat the olive oil over medium-high heat. Add the onion and cook, stirring often, until softened, about 5 minutes. Add the mushrooms and cook, stirring occasionally, until they've released and absorbed most of their juices, about 5 minutes.
  • 2. In a large bowl, combine the tuna and mayo, breaking up the tuna. Stir in the onion-mushroom mixture, then stir in two-thirds of the cheese.
  • 3. In a small bowl, whisk together the milk, eggs, flour and butter; stir in the tuna mixture. Transfer to a 10" deep-dish pie pan and bake until browned, about 35 minutes. Top with remaining cheese and broil until the cheese has melted.
  • *One thing I would add is a thinly sliced layer of tomatoes on top, then top that with the remaining cheddar cheese. It just doesn't seem like a tuna melt without the tomatoes!
