"When I worked at a local deli, a customer gave me this family-pleasing recipe," recalls Darlene Ward of Hot Springs, Arkansas. "After a busy day, I tried it with quicker boxed stuffing mix in place of homemade dressing. It's wonderful with salad and green beans."

1 package (6 ounces) stuffing mix
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
3/4 cup 2% milk
1 pound sliced deli smoked turkey
1 can (2.8 ounces) french-fried onions, crushed

Steps:

  • Prepare stuffing mix according to package directions. Meanwhile, in a small bowl, combine soup and milk; set aside. Spoon about 1/4 cup stuffing onto each turkey slice. , Roll up and place in a greased 13-in. x 9-in. baking dish. Pour soup mixture over roll-ups. Bake, uncovered, at 350° for 20 minutes. Sprinkle with onions. Bake 5 minutes longer or until heated through.

When a friend gave me some ground turkey to use up, I looked for an inventive way to prepare it. I found this recipe while scouring through my collection. 1 egg, lightly beaten
1/2 cup quick-cooking oats
1/2 teaspoon salt
1/8 teaspoon pepper
1 pound ground turkey
1/4 cup chopped onion
1/4 cup chopped celery
3 tablespoons butter
2 tablespoons water
1/2 teaspoon rubbed sage
1/4 teaspoon ground thyme
2 cups seasoned stuffing cubes
2 bacon strips, halved

Steps:

  • In a large bowl, combine the egg, oats, salt and pepper. Crumble turkey over mixture and mix well. Pat into a 12x9-in. rectangle on a piece of heavy-duty foil; set aside., In a large saucepan, saute onion and celery in butter until tender. Remove from the heat. Stir in water, sage and thyme. Add stuffing; stir until well coated. Spoon over turkey to within 1 in. of edges. Roll up, jelly-roll style, starting with a short side and peeling away foil while rolling., Place loaf, seam side down, in a greased 9x5-in. loaf pan. Place bacon strips over top. Bake, uncovered, at 325° for 60-70 minutes or until meat is no longer pink and a thermometer reads 165°.

1 (10 3/4 ounce) can cream of chicken soup
3/4 cup milk
1 (6 ounce) package seasoned stuffing mix
1 (2 7/8 ounce) can French-fried onions

Steps:

  • Prepare stuffing mix as directed on package.
  • Place about 1/4 cup of stuffing on each turkey slice and roll up.
  • Place roll-ups in a greased 13x9 baking dish.
  • Combine soup and milk, and pour over roll-ups in dish.
  • Bake at 350 F for 20 minutes.

Whenever I think of this appealing rolled turkey filled with Mom's moist cornbread stuffing, I can almost smell the aroma of it baking in the oven. It's delicious!

1 turkey (12 pounds), deboned and giblets removed
1 cup chopped celery
1 medium onion, chopped
1/2 cup butter, cubed
5 cups cubed white bread
1-1/2 cups coarsely crumbled cornbread
1 teaspoon salt, divided
1/2 teaspoon rubbed sage
3/4 to 1 cup chicken broth
3 tablespoons canola oil
1/4 teaspoon pepper

Steps:

  • Unroll turkey on a large cutting board. With a sharp knife, remove the wings (save for another use). Flatten turkey to 3/4-in. thickness. Cut between the turkey breast and thighs to separate into three sections. , In a large skillet, saute celery and onion in butter until tender. In a large bowl, combine bread and cornbread; add celery mixture, 1/2 teaspoon salt and sage. Stir in enough broth to moisten. , Spoon 2 cups stuffing over turkey breast to within 1 in. of edges. Roll up jelly-roll style, starting with a long side. Tie with kitchen string at 1-1/2-in. intervals. Place on a rack in a large shallow roasting pan. , Spoon 1 cup stuffing over each thigh section to within 1 in. of edges. Roll up jelly-roll style, starting with a short side. Tie with kitchen string; place on a rack in another shallow roasting pan. , Brush turkey with oil; sprinkle with pepper and remaining salt. Bake turkey breast at 325° for 2 to 2-1/2 hours or until a thermometer reads 170°; bake thighs for 1-1/2 to 1-3/4 hours or until a thermometer reads 180°. Stuffing should reach 165°. Let turkey stand for 15 minutes before slicing.

I am always being invited to get together's this time of year and I try to bring this recipe at least once during November and again in December. It's a real hit, it's easy and it's Turkey and Dressing. This goes over very well during this time of year. Kids even love it. My grandmother had been making this for years, but not with all the shortcuts we have at hand now. I added some things to it, and deleted others. I like to use the Foster Farms Oven Roasted Turkey Breast Slices that I can get at Costco, but you can use any (please use real Turkey breast slices) Turkey breast that you like. I also like to use the McCormicks California coarse Blend Garlic Powder with parsley. I use the Stove Top Stuffing, but you can use another if you prefer it.

2 lbs oven-roasted turkey slices, Sliced approximately 1/4-inch thick
2 (6 ounce) boxes stove top turkey stuffing
1/4 cup butter
3 cups hot water
1 (10 1/2 ounce) can cream of celery soup
2 (7/8 ounce) envelopes turkey gravy mix
1/2 teaspoon celery seed
1/2 teaspoon granulated garlic
1 (8 ounce) can sliced water chestnuts, drained and finely chopped
2 celery ribs, finely chopped
1 small onion, finely chopped

Steps:

  • Pour the contents of both boxes of stuffing into a large bowl, add the butter in small knobs, the soup, celery, onion, water chestnuts, garlic powder, celery seed and the hot water. Mix well. If you prefer a drier dressing you can decrease the water by 3 Tablespoons.
  • Lay out one slice of turkey, place about 1/4 cup of the stuffing mix into the center of the turkey and roll it up.
  • Place the roll into a 9x13 baking dish lightly sprayed with cooking spray, seam side down.
  • Do this with all the Turkey slices. (You should have eight rolls).
  • You will have leftover stuffing, that you can scatter around the pan.
  • Mix the Turkey gravy using the directions on the package and pour over the rolls.
  • Bake in a 350 Degree oven for 30-40 minute or until the gravy in the center of the pan is hot and bubbling.
  • If you are making this for a large crowd you can cut the rolls in half, you can also double this recipe very easily.

2 tablespoons poultry seasoning or dried sage leaves

About 1/2 cup Progresso™ chicken broth (from 32-oz carton)

Steps:

  • In 10-inch skillet, melt butter over medium-high heat. Add onion, celery and carrots; cook, stirring occasionally, until tender.
  • In large bowl, mix bread cubes, parsley, poultry seasoning, salt and pepper. Add broth and butter-onion mixture, stirring until desired moistness (stuffing will become a little more moist during roasting because it will absorb juices from turkey).
  • Use to stuff 1 (14- to 18-lb) turkey. After stuffing turkey, place any remaining stuffing in 1- or 2-quart casserole that has been sprayed with cooking spray; cover and refrigerate. Bake stuffing in casserole with turkey for last 35 to 40 minutes of roasting time or until thoroughly heated.
